Just created this as my kelp noodles have arrived:

Asian Noodles

*all measurements are approximate

1.5 cup sauerkraut (or seaweed mix)
1 cup kelp noodles
1.5 Tbs sprouted quinoa
.5 tomato diced
.5 T tamari (may have been more, maybe 1T even)
2 dashes ume plum vinegar
a few drops toasted sesame oil (toasted, yes, but at least organic ;))

Mix it all up, and enjoy!!

The vinegar shortly thereafter made noodles IDENTICAL to SAD spaghetti. MAGIC!!

so did your kelp noodles soften up?

Mine never do unless I kept running them under warm-hot water.

Incredibly! They are identical to pasta!! I'm now testing to see what it was exactly. It may have been the tamari, not the vinegar which i originally thought.

Yup, definitely the tamari. I performed an experiment: some noodles in a bowl with vinegar and sesame oil and one bowl with just tamari. After sitting for a while the noodles softened, and would have softened more if i had let them ;). I feel the entire combination, oil, vinegar, tamari quickened the process.

The few left in the bowl have absolutely no crunch. The time it took me to eat the original recipe was enough to allow every noodle to transform completely.

Did you give them enough time to soften up at room temp? The dehydrator definitely transforms this into comfort food for me.- at a couple of hours with extra water in the sauce. Don't give up on them!

yeah I've tried everything.

One night I made Pho soup and it came out really good. I let the whole soup base and noodles sit on the stove in a double boiler so it wouldn't get cooked... just heated. That was the only time they have been soft for me.

I tried to use them as spaghetti once... that was a funny disaster!

I have also made a quick sauce with 3 soaked sundried toms, 1 fresh tom, some organic dried basil, piece of carrot, piece of onion and about 2 tbs tamari. It was amazing! My bf was blowing on the fork while eating haha. I tell ya, the tamari is the secret
