:confused: HI ALL! USED MY EXCALIBUR 5-TRAY FOR THE VERY FIRST TIME MAKING ONION BREAD BY MATT AMSDEN. IT CAME OUT TOO SALTY. I FOLLOWED THE RECIPE TO THE "T", OKAY, LET ME PUT MY GLASSES ON. IT SAYS 1/2 CUP OF NAMA SHOYU. SHOULD I HAVE USED LESS OR SOMETHING DIFFERENT FOR A SUBSTITUTE? ANYSUGGESTIONS APPRECIATED.:mad:

Yeah, Matt's a salt junkie. In any of his recipes, cut the NS in half, test it, then add more if needed. I found out the hard way as well.

Yep, yours came out exactly right - FOR THE RECIPE. If you find it too salty adjust the batch to your personal taste next time. It's an awesome recipe to start from tho! Yum. :)

First of all, I love listening to Revvell's show! I am learning so much.

I agree with the adjustments to Matt's recipies. I have to back off on a lot of his garlic, spices and NS. The taco walnut meat is also heavily spiced with cumin as is the Thai salad dressing with curry powder. I put 1 teaspoon of curry powder which is about a fifth of the recipe.

My friend and I made the onion bread for the first time and also found that it was very salty. I suggested that she replace 1/2 of the NS with water, but I guess it isn't really necessary to keep the liquid volume up if you are dehydrating something, is it? I just wanted to make sure everything got coated.
