View Full Version : Raw Ice Cream Tweaking

I've tried making raw ice cream many times. Some times it turns out really good. However, even though I have an ice cream maker, 2 things keep happening. Often even after processing it in the machine and then freezing it for a day, the ice cream remains quite soft like soft serve and never hardens. The other thing is that despite it being so soft, there is always ice crystals in it. I thought that the point of using a machine as opposed to just throwing the mixture in the freezer was to eliminate ice crystals from forming. The ice cream is still good and tastes good, but I don't like the texture of the small ice crystals and the sound of them as I eat the ice cream. It's a distraction to the taste. I want the ice cream to be rich, creamy and smooth like real dairy ice cream. What could I be doing wrong? I usually use a mixture of water, cashews, coconut oil, agave and flavorings. Thanks. :)

I learned how to make raw ice cream by freezing banana slices, then food processing. The banana congeals, giving it an ice cream texture. You may want to try that instead... I found it to be firmer than soft serve.

It MIGHT have something to do with the type of nut you are using, or the ratio of water/nut when processing. There are some really great recipes on this board, if you "search" you will find them and they might give you an idea of how much water to nut......does that make sense?


By the way....I always use cashews because they have a high fat content, which you want in making creamy (not icey) ice cream.;)

Like I said, I use cashews for the nuts. I don't want to use bananas as I don't want to all be banana flavored ice cream.

How does everyone else's ice cream turn out? I've tried recipes before.

I use hempseed and sometimes mix with sesame.

the texture works out pretty nicely. pour into icetrays, freeze atleast overnight, put cubes in the vitamix add dates, cacao or frozen fruit and no liquid so it comes out firm.

don't have an actual ice creme maker. the vitamix works great. just mix up what you need and leave the rest in the ice trays for the next time.
