View Full Version : frozen food is getting frost burnt like..??

I threw everything away in the freezer and started over (all was freezer burnt). I froze bananas in a freezer ziploc bag and a few hours later they had the freezer burnt stuff on them. The bags are shut good..is this normal? Does it taste ok? My daughter is balking about it..thanks Kim

What I do with bananas, is I freeze them with the peel still on them. Some people think this is a terrible thing to do, due to the hardship of peeling them when frozen. But, I place 1 or 2 frozen bananas out on the cutting board, before I start my shake. I do everything else for the shake ( or ice cream). Then, after about 5 minutes, I think it is much easier to just slice off the ends and pare the skin off the banana.

Give this a try. I never have freezer burn on the bananas.

How about getting a thermometer and seeing what the temp is? You freezer may be too cold.

I freeze my 'nanas with no peel and have never had a problem. What is it you are calling "freezer burn"? Can you describe it? Do the 'nanas turn black?

Are you talking about ice crystals forming around your bananas? If so, next time, be sure and press as much air out of the bad as you can. Just seal all but a tiny air hole, then press air out of bag, then close up the air hole. The crystals are coming from natural humidity in the air, which precipitates out as ice in the freezer. I'd still use the stuff with ice on it -- you can rinse it off if you don't like it.

I don't think that is freezer burn. That is just the moisture/water/juice in the item freezing and being pulled out of the cell tissue as it expands. Freezer burn is usually a whitish/greyish color spot that is a different texture even after it is deforsted. It is easiest to see in things like meat, fish or green beans. After the meat is defosted the freezer burn area will still look markedly different than the rest of the meat or vegetable.
