I made tis for my Vegetarian Gourmet Group this weekend. The topping was very good. The eggplant itself was very leathery and hard to chew. Has anyone else made this? I dehydrated them about 9.25 hours.

I only put it in the dehydrator for 1-3 hours. just my 2 cents. :)

I slice the eggplant up the night before, salt it and put it in a colander with a weight on top to soften it, then rinse the next morning. Then when I make the pizzas like Zaphirah I only put them in the oven for a few hours.
