I'm making a tabouleh salad (got the quinoa sprouting right now) and want to eat it with falafel and hummous...I've lent out Alissa's book right now, I think she has a falafel recipe...What are your favourite recipes for falafel and hummous?

I just had to post on this, since really good raw hummus was one of the things I spent a long time searching for. I posted a thread a couple years back called Depressed - lack of hummus, and goraw posted one of the best raw hummus recipes I've had. I tweak it a bit to my taste, but I still use this recipe. The red pepper makes it red pepper hummus - my favourite!

1 Cup Raw Cashews
2 Tbs Raw Tahini
1 Cup Red Bell Pepper
Juice of 1 Lemon
2 Tbs Extra Virgin Olive Oil
1/4 Tsp Garlic Powder
1/2 Tbs Sea Salt
1 Tbs Ground Cumin
1/4 Tsp Ground Black Pepper

Soak nuts for 6 hours in filtered water. Drain water.
Combine all ingredients in food processor and puree.

I have to say that soaked cashews as a base make the taste/texture the most like hummus! SO delicious! Also, I have a good tzatziki recipe if you would like it! I just have to dig it up - it is great with falafel/veggies rolled into chard wraps or on a raw sandwich!

Just wanted to add that if you don't like the quinoa hemp seed works well too and I liked the taste better than the quinoa.

Ooh can't wait to make the raw hummous! If you get a chance I would LOVE the tzatiki recipe too! Ohh, I could make regular hummous, red pepper hummous and tzatziki! I'll be having a middle-eastern feast!!!

Thanks Morn I will bear the hemp seeds in mind for another time as I don't have any at the moment - I LOVE hemp seeds and I can imagine they would work really well. I quite like the taste of quinoa, I find soaking the sprouted seeds in diluted ACV for a couple of hours gets rid of the weird taste!

OK - I found the recipe for raw "tzatziki"/dill-cucumber sauce :)

Blend:
3/4 cup coconut meat
1/3 cup cashews, soaked overnight
1 teaspoon date paste
1/2 cup juiced cucumber, or toss 1/2 cucumber in blender
(I always change the amount of cucumber I add)
Enough water to make a tzatziki-like consistency unless it is already good

Pour in a bowl and stir in:
1/4 (4 tbsp) cup lemon juice
1/4 (4 tbsp) cup extra virgin olive oil
1/2 cup chopped fresh dill
1/4 cup chopped fresh mint
1-2 chilis (or none - if you don't like spice)
sea salt and ground pepper

---All amounts are approx. - Taste and see what flavours you like and modify recipe to suit !!!

This makes a ton - so cut the recipe in half unless you have alot of items that need dipping/sauce-ing :D .....I love this as a sauce for falafel, dolmas, raw sandwiches - or as a dip for veggies ...it is very fresh and herb-y tasting

Alissa's felafel are far and away my favourites -- they're very light and fluffy if you eat them warm off the dehydrator, and they freeze well, too -- don't take very long to de-freeze and warm up in the dehydrator.

My favourite tabbouleh is Storm's, basically lots and lots of chopped parsley and coriander, used like a green salad veg, with chopped tomatom, avocado and scallion mixed in, as well as some ground dry almonds (you can soak and dehyrate them before grinding if you wish) and a little olive oil, celtic salt and lemon juice to dress it. Yum!

I think the best raw tahinis are based on soaked cashew nuts or sunflower seeds rather than sprouted chick peas, which to my palate taste too strong when used as the base. A dash of cayenne and cumin is nice, too, and some garlic, with tahini and lemon juice to flavour too, of course.

I made Alissa's falafels...well, ish, I couldn't remember the exact recipe as I have lent out the book. Anyhow they turned out yummy. I had some for dinner yesterday with the hummous recipe posted by Crazy Delicious - yum!!

Crazy Delicious - I made the tzatziki to have with the rest of them, its really really good, I was eating it out of the blender:o Thanks!

Storm's tabbouleh was a staple for me when I first started eating raw, it's the best!

So...I must say hummous is one of my favorite things ever. The idea of a non-garbanzo hummus kind of repulsed me so I made one with them. I germinated the garbnzos and I saw someone on here had said they liked them as a snack...well that was a big mistake, they tasted awful. However, when I made them into hummous, I was delightfully surprised by the fluffy texture and the actual taste that was in fact amazing! So here is my (rough) recipe:

2 cups sprouted garbanzos
1/4 cup tahini
1 lemon (or more if you like it lemony)
2 cloves of garlic (I actually wanted it with more, but I like garlic a lot so I'll say two to be safe)
1/4-1/2 cup sunflower or olive oil (olive probably better, but didn't have any tonight)
1/4-1 cup of water
Salt
Pepper

Blend all together. I had a really crappy blender so that's why I needed so much water, with a vitamix you probably won't need much.

I made a hummus recipe on gone raw: http://www.goneraw.com/recipes/9-Hummus It was pretty good. Used half as much tahini, and only 1 clove garlic, and half zucchini / half summer squash.
