I don't have a juicer, so that option is out. I bought some because I remember loving the cooked, canned kind, eating them right out of the can even as a child. What raw yummy thing can I make with these? :o

red beet ravioli!
From RFRW.
I don't have the book on me now but its basically julienned beet cut into squares with cashew cheese sandwiched in between.

I like them in a winter salad grated with grated carrot (the colours kind of intermingle), fennel, dark green leafies and ginger dressing :)

i was going to suggest the red beet ravoili as well!
i do a tarragon "goat cheese" with pine nuts.

You can also shred it into salads, or make beet salad alone - really good! I like to spiralize it and mix it with zucchini and carrot to make colourful "spaghetti" - then I top it with cashew sauce or marinara - YUM!
The ravioli is excellent too - REALLY delicious :D

Oh, that ravioli sounds great! I think I'll sub a cheese recipe I have that sounds similar and give that a try, thanks for the suggestions :D I have got to get a spirooli so I can make some pasta!

Please Remember RAW Beets can be alarming when expelled if you forget you ate them. They look like Blood in your stool and urine....................

I and my fam love beets. I shred them in the food processor and mix with lots of lemon, a lit olive oil and sea salt. Put on top of other salads , it looks good and tastes great.

i tried mixing up grated beets with sprouted sunflower seeds and sprouted lentils to make a kind of 'burger'; haven't tried any yet, but it seemed to work..
