And I must say, it is a really beautiful book! I started skimming through it tonight and can't wait to try some of her recipes.

I do have question and I'm sure it's been discussed here, so please forgive me forgive me for not doing a search on it.

The Braggs Aminos. In the recipes that call for it, is it necessary? I am having a hard enough time finding the things I need at my local grocery store. I live in a small town with limited selection. I'm going to be making a once a month trip to a larger store, but would really like to avoid any unusual ingredients that I may not need.

No, Braggs is not necessary. It's used mostly as a salty flavoring. If you can get Nama Shoyu, that would work. If not, just add a little salt to taste.

All recipes folk put out are guides. Some wont taste so good to some folk, some will taste REALLY good to others. We all have different tastes. If salt is not your thing, cut it; if sweet is not your thing, use less.

Yeah, Nama Shoyu will work and even miso if you can get it. Yes, it's used to "salt" recipes, but it also lends a bit of it's own flavor as well, IMHO. Alissa sells Nama shoyu on her site. I have some and it's great! I like it a lot better than Bragg's taste-wise! Oh, and congrats on getting the book! It's great isn't it?
