I finally got my hands on one...But only one! What is the best thing I can do with it? Any good recipes/ideas?

mmmm, I love jicama, so fresh and crisp! Alissa's recipe for fries with it is quite tasty...I also just enjoy munching on it plain...cut up into sticks of sorts!
