Todds Waldorf Supreme

This salad can be used as a stand alone dish, or a side dish with any meal. Delicious.
Ingredients

* 2 Apples (I use fuji), chopped
* 2 firm Tomatoes, chopped
* 2 Avocados, Chopped
* 1 Sweet Pepper (Orange or Yellow), Chopped
* ½ Sweet Onion or Shallot, Chopped
* 1 sprinkle Olive Oil (up to 1 tablespoon if desired)
* 1 pinch Sea Salt
* 1 dash Cayenne Pepper (more if you like it hot)
* 1 handful Sprouts (Optional)

Preparation

Combine all ingredients.

The secret to this recipe is Stir, Stir, Stir to distribute the avocado. The avocado you use should be “medium” – not hard and not squishy soft – but just inbetween so it holds some form, yet spreads a bit to coat the other ingredients.---------from goneraw website-----you can also watch someone make it on youtube.I love this salad easy and I make it once a week

I'm bumping this recipe because it rocks....minus the onion and plus onion sprouts and some greens. Mmmmmm!

Just made this, and my husband says "what's wrong with this?" translation... he must really like it. It turned out great! I didn't have sweet onions, but I can see where they would have been better. Very surprising combination, I like different things like this. Sort of sweet and savory. Oh, I don't like peppers so I didn't put those in, plus added some raw chopped nuts. Will definitely be making it again.

Yes, I have found it tastes better without the peppers too...it rocks with the onion sprouts too. Nuts would be really good, I think I have also added sunflower seeds before.

It's pretty versatile that way, but I find you must have the tomato, avocado, apple and greens minimum as staple ingredients....but not only those...then it loses the complex and interesting myriad of flavours...

I love this salad so much I could cry tears of joy.

Ok...clearly I just want you to try it, lol.

I found that the apple in this salad was such a nice 'surprise', having the sweet. I agree - nuts would be really tasty in here! *Ü*

Here's from "The History of Waldorf Salad": "Waldorf salad [WAWL-dorf] Created at New York's Waldorf-Astoria Hotel in 1896 not by a chef but by the maître d'hôtel, (dining room manager) Oscar Tschirky, the Waldorf salad was an instant success.

The original version of this salad contained only apples, celery and mayonnaise. Chopped walnuts later became an integral part of the dish. Waldorf salad is usually served on top of a bed of lettuce. "

So all the other ingredients are really whatever you like. The mayo of course needs the vegan substitute.

Ate this salad for dinner tonight with a red onion. Very nice blend of flavors and textures. Couldn't really taste the red pepper with that strong of an onion. Next time I will use a small shallot or a spring onion.

I agree RK - I bought a small bag of Earthbound Farms organic red onions last month and those are THE strongest and smelliest onions we've had in a long time! UGH! My husband is loving them though, so that makes it okay....I guess.... (pu-ey) *Ü*

It's funny that this should come up now, for the past week or so my favorite dinner has been apples, avocado, and yellow bell pepper chopped up together.

So good!:D
