Cabo- do you think I could use regular cocoa powder instead of the cacao?
what does this taste like when it's done?
how long does it keep?

Hey there...I'm not Cabo, but if you use regular cocoa powder then it wouldn't be "Raw", but I've done this when experiementing with certain recipes to see how it would turn out...before I ordered Raw Cacao on-line....this does look like a good recipe! Deb in Kalamazoo!:D

Sure you could use it. I used to use organic cocoa powder a lot (Green and Blacks) before I started buying raw cacao, cos raw is so expensive. I think cooked tastes more bitter so you might have to add more sweetener. You could add the cooked cocoa powder bit by bit, to taste.

First of all.........I am SO HAPPY that you have discovered Harvest Health!:) I love that store myself and they are so friendly and knowledgeable in there.
I Don't know about the cocoa, as it is not raw.....but roasted, so I will not use it.......but the choice is your's because I would never tell anyone what to use. Did you find any cocao at harvest health?
The fudge is awsome! It is really awesome! Let's just say that my teens had NO idea that they were eating rawsome fudge! LOL.......mom's just have a way.:)
You can keep the fudge in the fridge for up to a month. Mine disappeared in a day!.......LOL

Hey! Does Harvest Health have Raw Cacao?? My health food store down here has Raw Cacao Nibs...I need to check to see if they can order the Cacao too....my In-Laws live near a Harvest Health on Cascade, I think, in Grand Rapids....it would be great to save on the shipping if I can pick up some there! My health food store has just the dried coconut in the fridge...they don't know if it is Raw....so maybe I should get at least the coconut when I visit my in-laws...I need to try your recipe...I have a taste for a non-nut fudge!!!:D

Sweet, thanks for the replies guys, it's so helpful to know there's people who go to the same stores I do and can exist happily as a raw foodie.
I know the regular cocoa powder it's raw, but I bought the highest quality organic type- Green and Blacks, it was recommended by Sarma at oneluckyduck.com in her book.
I have to say I'm a little scared to try cacao.... guess I'm still going off of the mentality that "it's not mainstream cocoa."
I can't wait to try this recipe tho!

Hi, yep there is another Harvest Health in Cascade, I've been there too, it's a good store, they have a good frozen section, it's just smaller that's all.
Check out some online retailers too, I know diamond organics.com sells refrigerated and raw things, they ship it overnight too so it won't spoil, I get a lot of food that I can't find in the stores online, plus bulk agave... so much cheaper! Hello amazon.com <--- the best source for cheap bulk raw agave!

Deberaw- go to amazon.com then do a search for raw agave, many options will come up then you can choose your brand, I usually get the Madhava, but next I'm going to try Organic Nectars, I hear that's a good brand.
