The below is my response to Elinka999's post about macs.

I just wanted to repost it in a new thread as it has good suggestions, if I do say so myself ;), as the recipe is FANTASTIC and more should try it.


Hi, just wanted to tell you've made that recipe twice now, with spinach and once with a few yellow squash shredded as i ran out of spinach and also added dill to the second batch. I use only about a 1/2 cup, of nuts total (no macs so i used cashews), even less actually, up the amount of water a little, add some black pepper, and also, most importantly, first soak the potatoes in a mixture of salt, lemon juice and water to draw out the starch. Soo good!

I'm chagrined to admit that I totally bailed out this Chanukah and did latkes the old fashioned way, fried in oil. :o

Spinach and Potato Latkes

1 c macs, soaked 8 hrs and drained
2 cloves garlic, minced
2 tsp. celtic sea salt
1/2 c lemon juice
1 c rejuvelac or filtered water
1 c pinenuts, soaked 2 hrs and drained
6 c spinach, chopped fine
1 sweet onion, chopped fine
6 small red potatoes, grated
1/2 c ground flaxseed
1 tsp paprika

Place the macs, garlic, salt, lemon juice and water in a blender and blend until smoother. Add the pine nuts and blend well.

Fold the nut mixture into the spinach and add the onion and potato, stirring well.

Add the flaxseed. Stir well, and let sit for 15 minutes. If mixture separates, add more flaxseed.

Spoon onto Teflex sheets and pat down into latkes. Sprinkle paprika on them and dehydrate 6 to 8 hours. Turn over and dehydrate for 6 more hours. They should be dry but slightly moist.

Thanks for the repost. I made this and didn't soak the potatoes first and it was horrible. Ended up throwing it out because it was so starchy tasting.

I'm sorry, I hadn't been around all weekend, thank you for posting the recipe, Mulch.

I hope you give them another shot, spiralgirl. I don't think you'll be disappointed. They really are terrific. And with the added dill from my other batch even better! (I LOVE dill :))

I hope you all try them, soak for as long as you want, just to be certain. Please let me know!!
