for all those that have tried the famous onion bread recipe by matt amsdan...

i just made a variation and i think it's awesome. i kept the recipe exactly the same except instead of onions i used grated apple. before you gag...just try it! it does NOT come out sweet or dessert bread like at all...it is still a savory bread but the apples give it a more delicate taste...it makes an awesome sort of all purpose bread (also a great break from having onion breathe all the time...also boosts the fiber).

just add enough grated apple till you have an amount that looks about the same as the amount of chopped onions you would have added. i found 4-5 small apples, probably about 3 large apples (but they vary in size so much). the 'dough' tastes not so great before dehydration as the soy sauce and apple kind of clash. but after about 28 hrs (i flipped it once at around the 24hr mark) you cann't taste the apple and it just becomes a soft moist bread.

i just ate 2 slices with sliced tomatoes and fresh cilantro. it was awesome.
anyone else have any other onion bread variations that worked?

At the start of your post, I went "Yuck!" and by the end I was thinking "Mmmm..." I can totally see how it would become delicious in the end. I'd love to try this. Thanks for the idea. :)

Cool! I adapted it a couple ways. One of my fav is to sub the onions for sweet corn & red peppers. I also like to sub the onion for parsley, celery & carrot but leave out the oil and add sea salt, curry & ginger to make crispy crackers!

That's a really good idea! I don't usually eat a lot of onions, but the onion bread was one way for me to eat more onions. But I was starting to get a bit sick of all the onions. This is seems like the perfect substitute! I usually have lots of apples on hand too, so this eases my "I'm out of onions!" worries.

one thing i forgot to add, but i doubt it would make that much of a difference...
but i actually changed the amount of flax and sunflower seeds:
4 - 1/4 cups ground flax (instead of 3))
2 - 1/4 cups ground sunflower (instead of 3)

sorry for forgetting that part! i doubt it would make that much of a difference, but maybe it does a little? the reason i did this is because flax is a complete protien and i wanted to add more protien to the bread.

anyway...great to hear all your replies! raw vegan mom, my next attempt is to make red pepper bread! your corn and pepper one sounds awesome, aswell as your ginger one.

i was also thinking of trying one with chopped tomatoes and maybe add a little seasoning.
i'll post my results, i'd love to hear any more ideas that anyone else has tried.

i love using the onion bread as a base as it's loaded with fiber, protien and omega 3 (and 6 and 9). it's the perfect bread! i prefer it as a staple rather than other bread recipies which are nut based and don't contain as much protien and fiber. though they taste delish, just love having a staple that's more nurishing.

another variation i've tried is instead of the onions, i use 7 + cloves of garlic
vwah-lah! garlic bread!
