Don't know why this works for me, but it does. I must have eaten this a long time ago, but it came to mind yesterday morning when I saw how empty my fridge was <g>. All I had on hand for an orange salad were these ingredients.

1 orange
1 T onion, very finely diced
1 T lemon juice

1. Cut the rind from the orange, then chop up the pithless orange.
2. Add the rest of the ingredients and toss to mix well.

If the onion used is too strong for some people, just occurred to me that chives would probably do the trick and would be really pretty.

I really like the sound of that: simple but good. In fact, I'm going to have it this evening! Thank you.

I eat this all the time...............It's awesome!

For a nice presentation...........take the whole peeled orange and slice it. Than lay a slice of orange and a slice of onion and keep repeating. Pour the dressing over the top.

It's also very pretty in a spiral pattern.
