Keeping dehydrated coconut?

I used to buy my own dehydrated shredded coconut but since I question it's true "rawness" I started grating and dehydrating my own mature coconuts.

I'm sure most of you know that spiled coconut smells like soap, well after a few months my shredded coconut starting smelling and tasting like soap.

Can it still go bad when dry? Could it have been bad before I dried it? I'm 95% sure it was fine when I opened and shredded and dried it.

The store bought one lasts for much longer without going bad.

Is there something I did wrong or what?
