View Full Version : How long to raw olives keep for in the fridge?

I ordered raw olives a while ago from sunfood, the ones in the water and spices. I was wondering how long to those keep in the fridge after opening?

I have had sunfood olives in my pantry for up to two years with no problem. Once they are open and in the refrigerator they do not last long. I would say that the longest that I have had them in the fridge is a month, just because they get eaten! The moroccan ones are soooooo delish!
p.s. I would taste one. Taste is a pretty good indicator if they are bad. Raw olives taste truly spoiled when they are bad. Hope that helps.

I've had mine there for a few months, had some yesterday and they seemed fine! I'm new to olives and am slowly getting used to their taste. I had them in a putanesca sauce with raw pasta yesterday.
What is it that causes them to stay fresh while the lid is closed and suddenly start spoiling when the lid has been opened? Would vacuum sealing the lid do as if it had never been opened?
I'd really like to start understanding food conservation, like why things in vinegar seem to stay good forever, why olives in salted water keep for years at room temp but until until it's first opening, etc.

I'm sorry, I meant to say that once they are open they get eaten very fast. Usually within two weeks. So, I do not have them open for very long which is why I do not know how long they last once opened. I determine that by taste. Sorry that was confusing. Take care!

By the way, are any of the olives sold in stores or helth stores raw?? Is there a way to know?
