Hi folks! I just put this together and it came out so yummy and beautiful....I wanted to share it!
about a cup of wild rice: soaked for 3 days: rinsed and water refreshed daily...today I just rinsed and drained....
some shredded carrot
some sliced cukes
some sliced green onion
handful or so of parsely
juice of 1 lemon
sprinke of sea salt
couple of dashes of olive oil
Mix and enjoy! This really hit the spot on this cloudy, cold winter day here in Michigan.....had it with kamut crackers.......and I have avo/chocolate pudding for later........:) ..now I've gotta go look up kelp noodles!:D
