View Full Version : Chocolate Mint Fudge

Oh how I have been longing for something chocolate and smooth:p Well I made this recipe for the first time this afternoon and have been letting it chill. I just had my first peice and it is so good. Enjoy it if you decide to make it.
This is a quick and easy dessert. Will satisfy your desire for a chocolate fudge/candy consistency.
Ingredients
6 cups Shredded Coconut
1 cup Cacao Power
1 cup Agave Nectar
12 drops Peppermint Oil
Preparation
Blend coconut to a buttery consistency. Add remaining ingredients and blend to mix thoroughly (it will eventually form into a large ball in the blender or food processor).
Spread out into a glass pan and sprinkle top with shredded coconut to desired amount. Refrigerate for several hours (or overnight) and cut into fudge chunks. Quick, simple and Delicious!
Variation: Substitute Peppermint Oil for Almond Oil for “Almond Joy Fudge.” (Note: Can also fold in chopped nuts of choice if desired)

Oh thank you! Must be this dreary Michigan winter day that is sparking chocolate wants! I have some chocolate pudding in my fridge, but I want to try this recipe too!{gotta get the coconut!}:)

Oh and where do you get the peppermint and almond oil from? can you use extracts instead? Thank you!

How many coconuts do you use to get 6 cups of shredded coconut?
that does sound good. When you say coconut, do you mean the normal hard coconuts with the fresh that you can grate?

I went to harvest health In Hudsonville to get my oil's:) You should be able to find them at your local health Food Store.
As for the coconut, I bought the organic shredded coconut there too. saving myself some work here!

I buy pure raw organic coconut out of the fridge section.......already grated up. If your local health food store does not offer it, you could alway's ask them to carry it:)

Cabo- do you think I could use regular cocoa powder instead of the cacao?
what does this taste like when it's done?

Cabosun you are a genius! This is ammmaaazzzing! I didn't have any peppermint oil, and I had to order my coconut online cause Harvest Health was out, but it is out of this world, this totally saved me!
Note to self: next time, freeze as little balls, or press the little balls into mini cookie shapes, cause getting this out of a frozen container was a beyotch!

Awwwww, so glad you are enjoying the fudge! I was at harvest health last Saturday and found some wonderful unsweetened organic dehydrated coconut. This is actually in the isle with all of the baking products. The name of the coconut is called LET'S DO ...ORGANIC I purchased both the coconut flakes and the finely shredded. I am taking a batch to my raw food potluck on wednesday in Muskegon.
I have another awesome fudge ball recipe for everyone to try. I have been sharing this fudge with alot of people and they have no idea that it is made out of nuts and seeds.....:D I Love this stuff!
1 cup raw sunflower seeds
1/2 cup raw almonds
4-5 tablespoons cocao powder
1/3 cup raw agave
peppermint oil to taste..
coconut
Process the sunflower seeds and almonds in a blender with chopper or food processor
Place in medium size bowl and add the cocao and agave and peppermint
Mix by hand and roll into small balls then roll in finely shredded coconut.
Store in airtight container in fridge.

I was looking at that exact brand but it wasn't refrigerated like you said in your recipe post... hmm, so you don't have a problem using coconut that isn't dehydrated raw, as long as its unsulphered? That would seriously make this easier for me to find!
