I posted a few days ago looking for a cake to make for my friend's b-day.
I ended making pecan pie that was fab! everyone loved it. i altered a recipe
i found to my tastes, here it is:

Pecan Pie

crust:
2 cups soaked almonds
10 dates

blend in food processor until the mixture is clumping together.
press into an oiled 9-inch pie pan, evenly on the bottom and up the sides.

filling:
handful of soaked dates
handful of soaked figs (about 10-15 of each)
juice from half a lime
1/4 t sea salt
1/2 t cinnamon

process in food processor until the mixture has a smooth consistency.
spread the filling evenly over the crust.

topping:
about 1- 1 1/2 raw pecans
(i soaked and dried these, but i don't think it's nessecary)
arrange pecans on top in an attractive fashion.

share with friends.

What a beautiful pie! Lime is an interesting choice for pecan pie. I remember SAD pecan pie being so buttery tasting. So glad everyone enjoyed it!
