How long shall I sprout wheat berries for?

I want to make a bread-type recipe from them...
Any help much appreciated!

I have instructions that say soak for 8 hours, rinse, drain, then sprout overnight.

They sprout pretty quickly. I agree with what defierrea says: soak for 8 hourse or overnight, then let them sprout for 1-2 days, till the little white shoots are clearly visible. If you go on a bit longer, they won't spoil, but the finished dish you make might taste a bit 'grassy'...
