I am new here (well newly rediscovered:) so forgive me if there is an incredibly obvious answer to my question. I was wondering why fresh juice only last 10-15 minutes before major enzyme death has occurred, but I read on here that some people make up smoothies and keep them all day for drinking, and sometimes 2 days. Why do enzymes in juice die right away but not blended fruits used in smoothies?

Alissa loves to workout....I think you'd REALLY like her book. Lots of great recipes and information beyond what you want to know. Well worth the money and time to read it.

To answer your question: in the case of the smoothie AND the juice you are going to end up loosing enzymes in 10-15 minutes (most of 'em). Perhaps the raw foodists you read about are foregoing the benifits of the enzymes in order to fit the diet into their schedules (keep in mind they are still getting a pretty good supply of un-preverted vitamins). Perhaps they use ice in their smoothies and store them in a thermos in a refrigerator that's at its coolest setting... I don't know. I'd like to take this moment to submit that raw foodism is a lifestyle, not a friggin' diet. This is not to say it's not for everyone, but it certainly may require some lifestyle changes that, perhaps, the folks you mentioned haven't come to terms with or haven't worked out yet... I don't know.
P.S. not all smoothies are comprised of fruit; what a lot of raw foodists refer to as a smoothie may be entirely comprised of vegetables, or a mix of things.
