View Full Version : anyone eating germinated brown rice?

is it *really* raw? I love it, but I feel like I am cheating when I eat it...LOL! :p

When it's soaked it doesn't appear to be sprouting...but Dorit swears by it...

I'm gonna try to sprout it, but I was wondering if anyone had already tried this? You could save me 3-4 days of work. ;)

It would share work.

pretty interesting: "Compared with diabetic rats fed brown rice or white rice diets, those fed a germinated brown rice diet demonstrated significantly lower blood-glucose levels (p < 0.001), improved NCV (1.2- and 1.3-fold higher, respectively), and increased Na+/K+-ATPase activity (1.6- and 1.7-fold higher, respectively). The germinated brown rice diet was also able to normalize decreased serum homocysteine levels normally seen in diabetic rats."

of course, this is RATS and not humans, so not conclusive. just interesting.

"Germinated rice contains much more fiber than conventional brown rice, three times the amount of the essential amino acid lysine, and ten times the amount of gamma-aminobutyric acid (GABA), another amino acid known to improve kidney function.

The researchers also found that brown rice sprouts - tiny buds less than a millimeter tall (1/16 of an inch) - contain a potent inhibitor of an enzyme called protylendopetidase, which is implicated in Alzheimer's disease."

i love this. thanks zaphirah!

check this "instructable" for what looks to be a good how-to on sprouting brown rice. http://www.instructables.com/id/HOWTO-make-GBR-germinated-or-sprouted-brown-rice/ i might purchase a yogurt maker for this type of thing (keeps things below 100 degrees...). the last page also offers the tip of sprouting brown rice in a broth of green tea! what fun!

I tried sprouted rice, but it tasted sorta chalky... never could quite get used to the texture.

How do you prepare it?

Stina

What do you do? First, you soak it, perhaps in green tea, then you have to keep it warm while it's growing? someone mentioned just putting it on top of the fridge for warmth. Does it require being drained and rinsed like other sprouts? I'm wondering for how long but it's usually pretty obvious.
I miss brown rice from my macrobiotic days. It was soothing on my nervous system.....

me-I just soak it for 24 hours and eat. it's almost the same consistency as cooked brown rice....

Maui-I'm confused...were they saying that the enzyme in germinated brown rice increased or decreased Alzheimer's ?

Do you need a special brown rice or just the organic brown rice found at the health food store. Is 24 hours long enough to sprout? I must try this!

it's special. regular brown rice is NOT raw.

it inhibits/blocks the enzyme that potentially causes/worsens Alzheimers.

Wow, thanks for the links! I would think that the dehydrtaor would also be able to keep it warm or perhaps sticking it in the airing cupboard too?

Thanks for the great link. . .

So this is PRE germinated? You dont have to germinate it yourself OR is this rice FOR germinating at home?? I'm so confused!:(

I could be wrong but I don't think that stuff is raw. It has alcohol in it and they tell you to cook it.

Zaphirah

yeah, I just don't cook it. I soak it and then put it in the dehydrator to warm it. I soak 1 or 2 cups and it lasts for 3 days or so. I didn't know it had alcohol in it...I'll have to check in to that. I just took Dorit's word for it after I took her class, ykwim?

This rice looks delicious - now we need to find out if it's raw and healthy!

I'm surprized I've never heard of germinated brown rice after studying/practicing macrobiotics and working at a health food store.

How is it germinated versus normal brown rice?

Bumping up. Hoping to hear some more peoples' experiences about this.

Rats, I just looked on the link, and it does say it contains alcohol. I'm wondering if maybe there is another source for something similar that does not contain alcohol?...

Stina

I just carefully read the tutorial link and it says to use brown rice, not white rice, and doesn't say anything about using a special germinated rice product.

As an alcoholic in recovery, I can't imagine it's enough alcohol to be an issue for me. I'd assume it's a very small amount. Would it even be enough to detect a taste? For example, I know sourdough bread has alcohol in it. I use vanilla extract preserved in alcohol and I don't think it's a big deal.

I'm on this rice thing though!

Eva

Ya know Stina... I wasn't even thinking about alcohol in that way, just it not being raw. I sure hope they don't put enough alcohol to be a problem for an alcoholic in recovery.

I actually have used vanilla extract preserved in alcohol for raw recipes (although I have the bean too)... And I can't say it was a problem as often non-raw items are for me. But I wonder if it wouldn't be a much higher quantity for something like the rice.

Stina

I assume the alcohol is naturally produced?

I called the company from the link provided for a source and they really didn't know anything about their product. That's the way it is these days. The customer service rep said they start the germination process and then stop it. Which leaves me still wondering if that's not something we can do at home with "normal" brown rice. Alas, I will experiment and report back.

I decided to try germinating brown rice - I love rice so much :) I used just organic brown rice from the store, plus some wild rice which I put in a separate container in case one or the other didn't sprout. I've kept them in water for 2+ days in the dehydrator at just under 100 degrees. I never had any problems with the rice/water smelling bad - been changing the water 3X a day. The wild rice now has little white sprouts sticking out now and the brown rice has big nubs growing on the ends of them - I was so excited to see that! So this brown rice from the store, at least, was raw. The directions said to do this for 3 days, and it hasn't quite been 3 days yet. Both kinds of rice are still kinda hard/chalky and it's hard to picture them getting very edible soon. Maybe if the rice doesn't soften up more, it could be ground up and used somehow - make rice crackers or something. I'd love to hear any ideas about what I could make with it.

I sprouted some wehani rice until it had 1/4 inch tails, and it was still crunchy and a bit chalky. It had the strongest "rice" flavor I had ever tasted. I'm still not sure what to do with it, as I don't have a dehydrator.

I have also sprouted organic brown rice. It hasn't worked with every brand, though. I think you need to get a good-quality brand that is freshly harvested; so ask. I also did not care for it; it was chalky. But this was several years ago and I didn't try anything with it or work with it to make it edible.

I think, if I were to sprout some now, I would, after sprouting, pulse-grind it and rinse it to start. This would remove the starch which is what's making it chalky.
However, I'm sure someone creative could find recipes to make of it :)

If it creates a plant, it's raw. And I can't see how rice would have alcohol in it. If it's dry, there is no alcohol. If it's wet, you don't want it anyway. Germinating seeds does not produce alcohol. Letting fruit or veggies start rotting does. When the rotting is under control it produces wine and beer. etc.

It's been about 3 days now on my germinating experiment. The wild rice is softening up and may get edible if left a bit longer. The brown rice was still chalky, so I've ground it up and am making it into crackers. I'll let you know how it turns out :) Unless they're somehow awesome crackers, I doubt it'd be worth the trouble to make again. The batter tasted nice though.

Anyone know where I could contact Dorit via e-mail or where she shares info on this project? She sure is a fascinating character.
I was just reading in Dr. Gabriel Cousens book that GABA is really powerful medicine for the brain, helping with depression.

It's her webpage, at least.
