View Full Version : Yummy Egg plant

I had an egg plant that needed using so I concocted this easy recipe and was really suprised how good it was: my non-raw (but vegetarian) hubby ate up every scrap! Enough for 2.

1 egg plant
3-4 tablespoons nama shoyu
1 crushed garlic clove
sprig of thyme or oregano
handful of pecans or walnuts or almonds plus a few cashews

Slice the aubergine as thin as you can. Mix them with the nama shoyu and garlic, rubbing them with your fingers.

Dehydrate for about 4 hours, stirring them half way through.

They're done when they're soft and tender.

Put into the food processor with the thyme or oregano and the nuts and process to a 'mince' texture.

Eat as is, or make them into 4 burger shapes, pressing the mixture together.

thank you for sharing - i never know what to do with eggplant other than lasanga - any pictures or is the evidence all gone?! Alicia

I thinly slice it and soak the slices in salt water to get the bitterness out and then i squeeze the water out of each one and shake it.
I grind up pecans and flaxseeds and brewers yeast and coat the front and back of the eggplant and put it in my convection oven for an hour and a half.
When i take it out it's crispy on the outside and moist on the inside.
I was thinking about chopping mine up and making something like sloppy joes.

Sounds like you've boughten many eggplants....how does a good eggplant feel and look. I need some help knowing how to buy a good one. THANKS!!!

I love the sound of your egg plant 'fritters', Bethanie and can't wait to try them. think they'd be delish with a creamy mac mayo, made sharp enough with apple cider vinegar -- or they would be good with lemon slices. And, if you saw the othe posting here about all the good things in the skin of aubergine/egg plant, it's good to know it's so health-giving!
