Oh my goodness - I just made Alissa's Broccoli Soup recipe (my first raw soup!) and it is DELICIOUS

This is going to be a staple of mine now - creamy, thick and satisfying -oh and did I mention tasty? :D

Come on everyone who hasn't tried it yet, give it a whirl, you won't regret it I'm sure :)

Has anyone else got a favourite soup recipe from Alissa's book they can recommend?

It's so great! And really easy to make too - no soaking or dehydrating required.

For some reason I thought I might find it a bit bland / boring, but I wanted to try out a soup recipe so I had an alternative lunch / dinner idea. Boy was I wrong!

I really wanted to like this because I LOVE broccoli but sadly I must have screwed it up somehow. Mine was awful :(

I GOTTA get her book, SOON!!! I LOVE broccoli, & used to buy a broccoli soup by Knorr that I'd add a ton of broccoli to, & have missed it, soooo much!

I take it the recipe can't be posted, right?
I gotta wait for the book? *sigh*:(

You're in LUCK!! :D

Sometimes, especially back in the day when Alissa was more active on the forum, she'd post herself or allow someone to post some of her recipes depending...well, just so happens I searched and found where she, herself, posted the recipe for someone wanting to try a broccoli soup recipe so, here ya go!

This is directly quoted from Alissa's post several years ago:

make mine from the book...its unbelievable!!! i always add more cumin and salt but this is THE best!

Alissa's Broccoli Soup
from Living on Live Food

So creamy and satisfyingÂ…one of my favorite soups! The cumin and sea salt are very important in this recipe, so make sure you have added enough of both of these to bring out the flavor of this soup.

3 cups water
1 cup almonds
1 teaspoon honey
2 cups broccoli
1 avocado
1/2 to 1 clove garlic
1 Tablespoon olive oil
1 teaspoon onion
1 teaspoon sea salt
1/8 teaspoon cumin
1/8 teaspoon black pepper

1. In a blender or Vita-Mix blend water, almonds and honey until smooth.
2. Add in the rest of the ingredients and blend until creamy.

Note: Add more sea salt if this tastes bland.

A tip from Rawkie: I do like this soup (haven't made it in a while, though), but I tend to blend part of the broccoli up into the soup and then the other portion, I roughly chop, marinate and an optional step is to dehydrate for a bit to soften it up and then I add those pieces (stirred in by hand) to the soup. I also used cashews instead of almonds as it makes it more creamy and less "grainy"...but it has a good flavor and don't be afraid to add more pepper, salt, etc. if you need to! :)

Good to know you could use cashews too. Almonds do give a kind of grainy texture but to be honest I really liked that, it gave a great consistency.

I don't think the olive oil is in the recipe in the book - I need to get some of that in my diet so I'll add it next time.

Also in the book it calls for 1/2 a teaspoon of cumin - so a little bit more than above. I would def use the 1/2 teaspoon because it really brings a great (delicate) flavour to the soup.

Hey - you should get the book anyway though, it is fantastic. Loads of motivational stories and tips in addition to the fantastic recipes :)

Should the almonds be soaked first? Will it affect flavor?

Bampot, thank you for posting that you liked Alissa's broccoli soup. I love broccoli soup, and have been wanting to try it, so I appreciate your review.

I have tried her carrot soup and it is delicious. I have also tried the pea soup. I made it with cashew milk instead of almond milk, as I haven't been keeping almonds on hand. It was also very good. I somehow made it a little thick, probably too many cashews, not enough water, so next time I will know. It was still very good. My husband also really liked both of these soups.

Thank you again for your review! :)

Blessings and peace,

Unfortunatley, I wouldn't be able to make this recipe because my equipment just doesn't get nuts smooth enough.

But I did make Alissa's Spicy Tomato Soup last night and it was fabulous! You should try that one.

No the recipe doesn't say you need to soak them

No problem Marcia! And thanks for the tips about the carrot soup and pea soup - I'll have to try those next :)

Ooh spicy tomato sounds good too. Maybe you could still make the Broccoli recipe - I don't think it will matter too much if the nuts are a bit chunkier. My soup wasn't super smooth, but I liked that texture to it

I made this today too by coincidence. It's one of my staples, I adore it.
I always add a lot more cumin though - at least a heaped teaspoon, usually more. Sometimes I add more broccoli - sometimes with the same amount you can't taste it at all, other times its really strong. Today I made half the recipe but used 2 cups broccoli and only 1/4 cup almonds.

I haven't made any of Alissa's soups but my other favourite soup is the Not-Campbells Tomato.
I also really like the raw familys chicken soup and the chicken soup for the soul recipes.

I did NOT like this soup the first time I made it.

Then I made it without the garlic and loved it. I love garlic but with the raw broccoli it can add a bit of a bitterness to the soup.

It is now a favorite of mine. I even love to add red pepper to it.

I made this soup yesterday but used almond milk and it was so much better to me this way, smoother. It was the best soup I've eaten in a long time. (Once I ground up the almonds & water, I strained it through a nut milk bag and made the almond milk.) SO GOOD!

I'm thinking of cutting the recipe in 1/2, since it's just me. How many servings do you think this would make?

One cup almonds equals how much almond butter, please?

OMG you are sooo right, it's AMAZING!!! I made it last night and substituted soaked cashews for the almonds...WOW. It's gotta be my favorite raw soup ever.
Sadly my daughter and partner both thought it wasn't good...but that's okay cuz I ate their portions, too. WHOA! Good stuff.
To me it tastes like cream of broccoli soup. The cashews made is SOOO creamy and dairy-like! Yum.

I LOVE this soup too. I have to make a half a batch or I'll eat the whole thing. I love soup on rainy days and it was horrible weather here the other night and it really hit the spot.

Have you made this soup recipe without the avocado in it ? I have some brocolli and I would like to make something but I can't use avocados in it.. I wonder if it'd still be the same if without using the avocado.
