I read about a nacho cheese recipe that contains nutritional yeast, is it possible to make it without the yeast? Will it change the taste?

Yeah you can just omit it. It just adds a bit of a cheesy flavour but you can create it with miso, tahini, etc.

What is nutritional yeast called? or is it just that? At my health food store we have brewers yeast and savoury yeast I think. All these different yeasts but I don't know what one is considered nutritional!

should be labeled as it says, "nutritional yeast" definately NOT brewers yeast. I don't know if nutritional yeast is raw, but i'm pretty sure it isn't "living". many people use it for B12, however it only is fortified with that, just as milk is fortified with vitamin D.
