Since we all eat a lot of salad, I thought it might be helpful to have a whole thread dedicated to salad dressings. This way we can easily find a new dressing. :) Who wants to go first? :p

I love an avo, mashed, in the bowl I am going to put the my salad in...add alittle water. Then I add spices like italian seasoning, sea salt, dill.....pour in my salad and mix up...wonderful taste, one bowl (no extra mess) and I get the avo in the salad, with all the flavor!!!

YUM, YUM!!

This is the one we've been working on this week.

Insteada Ranch

1 1/2 c. raw cashews (soak if not using High power blender)
2 cloves garlic
Juice of 1/2 lemon
1 1/2 c. water
1 TB Honey (or agave)
1 1/2 tsp. sea salt

Blend these ingredients on High until smooth, then add:

1/2 tsp. dried dill
1 tsp. dried parsley
1/2 tsp. coarse ground black pepper
1/4 tsp. white pepper
1 tsp. onion powder

Blend gently until incorporated. Refrigerate (this is best if it sits a couple hours or over night, but good right away). And I'm sure you could substitute some fresh herbs for the dried ones.

I also prefer simplycity - olive oil and lemon juice, nice and easy. If you are really interested in salad dressings, I would suggest checking out Frederic Patenaude's "70 Healthy Salad Dressings" ebook (http://www.fredericpatenaude.com/HealthySaladDressings.html), I tried at least a dozen recipes and they all came out delicious.

I eat this all the time...

Asian Dressing - 1 serving

1/4 cup nama shoyu
1 T. apple cider vinegar
1 T. agave nectar
1/2 tsp. toasted sesame oil
1 small shake of organic white onion powder
1/2 tsp. red pepper chile flakes
1/2 tsp. black sesame seeds

Put all ingredients in an air tight container. Shake well and pour over salad.

I like to pour some Hemp seed oil onto my salad as a dressing and sometimes I crush some fresh garlic into the oil. My favorite salad to use the Hemp oil on is baby spinach. Simple and easy.
