I have a quickie question--
I just made two of Alissa's desserts--the date nut torte and the fudge balls. I followed the recipes to a T. They are both delicious; however, they are both very *oily*....in fact, I had to tip the plate the torte is on to drip some oil off.
Did I do something wrong? I can't imagine what, except maybe the dates weren't dry enough...:confused:

I think, but not sure, you may have over-processed the nuts, which have released their oils...like if you were making nut butter...

The Date-Nut Torte was SUPER oily when I made it too. I haven't the foggiest as to why.

Oooohhhh....hmmm.....that could very well be it. I put the nuts and raisins in together and processed it for a long time to get the fudgy consistency, but I thought I was supposed to....ok--next time, less processing. Thanks, subbacultcha!

Alissa actually patted hers down with paper towels before she served it to us at the training. So I think it's normal for the oils to release their oils as they are blended.

Also try processing the nuts first and then add the raisins so you cut down on the processing time a little. But yeah, processing for a very long time will cause the nuts to release oils. Sometimes my tortes come out REALLY oily and sometimes just a little bit of oil.

Try chopping nuts first as small as you can by hand, with a knife. Then, with the processor running, drop them through the shoot. Let it go a bit, then pulse.
Another option, is to simply drop nuts and seeds through the shoot while it's on in a stream. Once all are in, pulse till ground.
Both ways work well, the first being the better.

Thanks to all! I chilled it for a few hours, dabbed the excess oil, and it's fine now. Mmmmm...yum. I love the frosting.
The fudge balls are great, too. I did add a fair amount of extra cacao (instead of carob) though, because I like a BIG chocolate flavor. :D
