I accidentally put my onion bread at 140 degrees for about 10 minutes before I realized my mistake. How dead is it? Do you think it's still alive at all? Would YOU eat it if you made the same mistake?

Oh please. Unless you put it in the oven?
A dehydrator's barely getting started at that temp for that short a time.

no no-it was already "preheated", iykwim? see, I had just washed the teflex and i wanted it to dry quickly so i cranked the machine for awhile. when it was dry I spread the mix and popped it in the dehydrator. I think it was only about 10 min, but maybe up to 20. (I didn't look at the clock.) I still plan on eating it. I'm not in a position to throw food away. I just was wondering if it could be dead/partially dead. How long does food have to be heated to start to die? does anyone know?

If it's at the start of the dehydrating it's fine. One of my recipe books, written by a well informed doctor (not the quacks that are in hospitals), starts all his dehydrating recipes at 145 for 2-3 hours, because due to the high water content at the start, even though the air is 145, the food is still well below 118. After the 2-3 hours at 145 it's then down to 110 or so for another few hours. This trick cuts most dehydrating time in half.
