View Full Version : Banana Cream Pie recipe - confused!

I just tried making the Banana Cream Pie in Alissa's book
The base turned out great, and I pressed it into a cake tin in anticipation....
Then I blended up the filling (bananas, shredded coconut, apple juice, honey, tahini) .... but it is too liquid, just like a smoothie
I poured it over the base and have popped it in the freezer - it's just too runny to eat any other way than frozen
Does this turn out the same when everyone else makes it? It's probably just my poor preparation skills! :rolleyes:

Mine was never runny. It turned out perfect.
What kind of coconut did you use?

I just used dried shredded coconut - is that right?
Maybe I just used the wrong amounts or something

Whenever I have something turn out too runny I'll add some Physillium husk powder to it and that does the trick. I bet it still tastes good froozed.

The recipe does call for 1 1/2 cups of apple juice and only 1/2 cup of coconut to thicken (the other half cup to sit on top of the pudding) - so I don't see how it can be thick enough really?
Yeh I'm excited all the same to try the frozen version! ;)

you could add coconut solids which harden when at room temp or cold.
And you could try grinding some flax seed and blending it in. The flax gels up.

maybe next time try adding a whole apple instead of the apple juice? i think when i made it i actually left the juice out altogether. or yeah, try the psyllium. the flax and psyllium will do more or less the same thing but the flax will add flax-taste while the psyllium wont

Are you making the banana creme pie on page 513 of Alissa's book? It says just 1/2 cup of apple juice in the filling. Is that the amount you used? :confused:

Not to sound daft, but....where do you get the raw apple juice? I don't have a juicer...:)

If you don't have a juicer, you can try this: Chop up your apples (take out the core and seeds) & put in your blender and puree, then put that in a nutmilk bag or strainer and squeeze out the juice into a big measuring cup. I've done that before when making nut milk, so maybe it'll work for juice.

Still, my frozen banana pie is scrumptious, so at least I learnt an alternative way of doing it - ha ha

Just don't make the filling too liquidy like me - doh

OMG, it's delicious! I put mine in the freezer for about 20 minutes, so it's not frozen, just ice cold, and it's perfect like that. I just ate a big piece with a warm cup of tea, and it was fabulous. I'll be making this all the time now. I put mine in a 9" tart pan, and it looked so pretty.

I have made this twice. In fact I just finished the last two small pieces for a snack. It is one of the best desserts I have made out of Alissa's cookbook.

The frozen version is right down my alley! When my kids were small I used to make all our "ice cream" out of frozen bananas put through the Champion Juicer along with any other frozen fruits of our choice. Mixed together, we didn't need any additional sweetening or anything. It came out like soft serve and just used our own home-frozen fruits.
(Champion Juicer could be substituted with any juicer with a blank for making nut butters, etc. in place of the screen)
SO I am now going to try this pie and freeze it deliberately so I get an ice cream pie!

Yay - the Banana Cream Pie gang! Try it frozen for sure - it's scrumptious. But it is kind of hard to break a bit off with your spoon. I just left some on my plate to defrost slightly before digging in
Or you could just freeze it for a short while like garden granny

Ok, I just made this and it looks for sure like it needs to firm up, but the recipe doesn't say it needs to be chilled. At room temp, it's yummy goop....what did I do??? Will it firm up if I put it in the fridge?

Oh, ok. I just read a bunch of threads on this. I scraped the filling out of the crust and mixed in some coconut oil, then poured it back in. Hopefully that will work out. :p

Has anyone tried a cacao version of this? It sounds potentially great, but I think I'd process all the banana with the chocolate and something to firm it up, like psyllium or coconut oil...I'm open to suggestions.
