The recipe is in Allissa's book!! Carob, almonds, dates .... I added Vanilla and this time let things sit between additions so that it would all absorb!!! Its taken me three times making the fudge but this time I've got a keeper!!

If you look up the caramel-coconut cookie thread (or is it coconut caramel?), I posted a fudge recipe there many moons ago. Quick easy, delicious.

I soaked my almonds and then dehydrated them for 24 hours. I used my Vitamix to make almond butter. I would have used my Champion but I saw a thread where the person used their Vitamix, so I tried that. (Eh, maybe next time I'll rerun the almond stuff through the homogenizer. I didn't feel as comfortable as I do making peanut butter) I soaked two cups of dates with pits removed for maybe 20 minutes. They were smooshie but somewhat firm still. I deposited the almonds into my food processor and gave them a couple of spins ....... let that sit and cool for a bit while I did other stuff. There really is no approximate time for sitting, I just walked away from it or was making flax crackers, or doing laundry, or getting weather updates .... multitasking I guess:p Once the dates were ready I mixed them in. I thought about the Vanilla and added it to the mix. Again with the mixing. Dh came home and wanted to get something to eat ....... so I kwikly tossed in the carob and mixed a little more and we took off.......... So long story short I just kinda gave things time to meld and absorb and mingle. But I'll be honest, I'm sure it was a mistake:D My first two batches were really ummmmm, not to cohesive making them more of a chunky sticky eat it with a spoon sorta fudge. Then I mixed in Cacao nibs ......... uh, that was a mistake.. the fudge eventually took on the bitterness of the raw cacao.
But be very careful, I was cleaning the fridge the other day and found a container with four round fuzzy gonads in it......... something got in my fridge and replaced my fudge balls with some fuzzy balls:eek:
