View Full Version : OMG, cacao powder fudge

I've been using cacoa nibs for the past two months, but I just got some raw cacao powder and MAN, does it make a HUGE difference in the taste and texture of my chocolate creations. It is SO delicious. I am in chocolate heaven.
A quick raw fudge recipe that I invented tonight:
1 cup cashews, ground into a powder w/ blender/food processor
1 cup dates
6 tbs. cacao powder
2/3 cup melted coconut oil
Blend all ingredients until smooth. Pour into tupperware container. Chill for 1 hour and cut into 1 inch squares. Keep in refridgerator. Serve each piece garnished with 1 fresh red raspberry.
Also try choco/vanilla, choco/orange, choco/walnut or choco/mint.
I am so glad I got my raw, organic, vegan, fair-trade certified cacao powder! I bought it from www.luckyvitamin.com for a really good price.

mmm i love cacao in any form, but i agree, the powder is especially yummy :)

Is the texture different than if I just put my nibs in my coffee grinder?? I love raw fudge and have made it before with organic cocoa, but I just bought some nibs, and want to try it.

YES, I used to buy nibs but once Alissa got the powder in & I tried it there is no comparison. I mean, nibs can be ground down~but they are never as smooth as the powder.

try the raw chocolate chunks from natural zing and you will be in HEAVEN. they actually MELT! and they are 100% pure raw cacao, thats it.

I used the ground nibs before too, but the cacao powder is so much more smooth and has such a more complex texture that it just doesn't compare.
You can also use a lot less of it than the nibs and get the same or greater chocolate flavor. Because it has a finer texture, more of it comes in contact with your tongue when you eat it.
Since it costs about the same per pound as the nibs, it's a pretty good deal when it comes to flavor.
It is processed a bit more than the nibs, though. That's the only drawback.
But it's still raw :D !
