Forcing persimmons?

I was just wondering if anyone knew if I could pick my persimmons early and put them in the freezer to simulate frost then take them out and let them ripen on the counter? Is this possible?

I had no idea persimmons ripen after the frost. No wonder I haven't seen any in the stores yet...

Yep they are brick hard and super bitter up untill they are hit by the frost then they soften and get real sweet. But the birds always get there before I do. So thats why I was wondering if I could force them to ripen early.
