I'm wondering why all recipes I see for homemade dehydrated crackers never call for any oil.
I would think that oil would make them better.
Most regular crackers contain oil (usually crappy trans fat oils).

Anybody ever make flax seed type crackers using some cold pressed olive oil in the batter?

The flax seeds in and of themselves are oily. You can always add oil to anything you want. I usually cut it out of many recipes I've got.

oh, I forgot that flax seeds are oily!!!
duh!!!
but the crackers never seem to have that fatty feel.
they come out so dry and brittle.

Yeah, that's why they're crackers and not "bread". Crackers a crisp and crunchy. The "breads" have more oil which make them chewier.

i tried making sunflower crackers and adding just a bit of cold pressed unrefined sunflower oil gave it sort of a more crumbly, short-bread like consistency. i really like it better with the oil. the crackers will crumble more, but i think the taste/consistency is so much better.

...hmmmm, I do put some olive oil in with sprouted/dehydrated/ground grains....yummmy!
