View Full Version : Raw Veggies?

I have been transitioning over to a raw diet for a month or two now (with several ups and down). The one thing I am having issues with is eating raw veggies. I eat a lot of greens in 1-2 green smoothie plus a big salad everyday but beyond that the only veggies I really eat are tomatoes, avocados, carrots, snap peas and cucumbers. I try to buy more of other vegetables but end up letting them go bad because I just can't get myself to eat them raw.

I think one issue is that I don't have a food processor and can't make many dips or pates. I always LOVED cooked vegetables :(

How many raw veggies do you all eat? Is this a problem?

There are plenty of other raw vegetables you can put in a salad. Like sprouts, onions, peppers, celery, cauliflower, broccoli, even corn! Yes, I know corn is a grain but you can eat it raw.

I tend to eat most of my veggies in salads -- The list of veggies I might add to my salads are:

Avocado
tomato
sprouts (bean sprouts or alfala/garlic sprouts)
mushrooms
yellow, orange, or red bell pepper
cucumber
Various greens (variety of lettuce, Kale, spinach)
green onion or red onions
corn - I often use frozen
peas - I use frozen peas (defrosted of course!) ;)

I might also add - sunflower seeds, pumkin seeds, or sprouted buckwheat

for dressing - I either eat my salads plain, or ...
with lemon juice, sometimes vinegar and nama shoyu
Snows raw ranch dressing or Goddess dressing

I also love to dip my veggies in Snow's raw ranch dressing -
cucumbers, broccoli, yellow bell peppers, jicima

I love raw corn on the cob -- I eat it plain -- or smash an avocado and rub that on the corn ... it's fabulous!

so -- see-- we pretty much eat similar - I just add mine to salads or dip them in some kind of dressing - I tend to enjoy them better that way.

you're doing fine... Some days you will want more greens than others... jes go with the flow!

If you have a dehydrator you can stick veggies like broccoli with some kind of marinade (like Snowdrop's sesame sauce :)) in the dehydrator and they soften up as if they were cooked.

Raw cauliflower is wonderful!! Blend it up with a little water (I use home made almond milk) and nuts and it comes out really tasty :D You can do this with avo and cauli too, maybe add in some broccoli... mmmm :D

I have a salad that I make that gets all sorts of veggies in it but in a different way then a traditional "green" salad so it gives me the feeling of something different.

In a big bowl I chop up a head of purple cabbage and then add up a variety of veggies such as , corn on the cob (shaved off the cob), carrots, zuccini, onion (whichever you prefer, I use red), brocolli, bell peppers and more. I grab anything I like, chop it all up and mix it in with the cabbage.

For a dressing I blend up an avocado or two with the juice of a lime or two. I blend it so it's a creamy smooth consistancy and then mix it well with the veggies to coat it all.

It's so simple but different and it makes a big batch and I eat until I'm full and there is enough for a snack later or lunch the next day.

I find when things look different if feels like your getting a variety, so the purple cabbage is different from the traditional green salad.

Just mix things up and don't be afraid to try new things.

Green beans are good. I like wheat sprouts (sprouted just a few days, not until they're green). Jicama is good.

Why don't you get a food processor? If money's an issue, go to Craigslist.org, a yard sale, thrift store, etc.

Money is an issue, but also the fact that I move around a lot because of jobs and usually don't have room to take a lot of stuff like big appliances. My mom actually works at a thrift store and brought me home one that ended up being totally worthless. I'll tell her to keep her eyes open though. I also don't have a dehydrator, just a magic bullet (doesn't puree like it says, or I suck at using it) and a crappy old blender!

I don't like salads, so I eat a lot of fruit and then veggies with some kind of dip. I didn't have a food processor for a long time, and still managed to make raw hummus, raw guacamole, etc. It takes longer than in a food processor, but you can still do it. Also, I've made a lot of raw salad dressings in a magic bullet for when I had to go to a function or potluck or something and needed to eat a salad, and it works pretty well.

Ultimately, you're eating way more fruits and veggies than you were before going raw, right? So I think you're doing great!

Ok, I think even without a food processor you could make Alissa's avocado/spinach dip. Just chop up the spinach really small with a knife and blend an avocado in a bowl. Add them together and you have a divinely creamy dip for all veggies. Dip in!

Also, with the blender you could make green smoothies.

I didn't have a food processor or dehydrator for the first 7 months I was raw and I managed to stay 100% way better than I do now with all my gadgets. Wait...what does that mean?!? :p But it's true. Use your imagination. Eat simple raw!

Making a dip out of avocado is a GREAT idea, I need a dip that is really creamy and rich (like ranch :o ). My mom suprised me with a Vita-Mix today! OK, so it is a super old 3600+ but it WORKS! I think this will help me in my blending ventures.
