If you love ranch dressing you have got to try this recipe. I am ADDICTED to it and look forward to each salad with it! Thank you Snowdrop :)


Snowdrop's ranch dressing/dip


for those missing that hidden valley feeling. soak time 1-2 hrs
5 Minutes to Prepare

Ingredients

1-1/2 c nuts (cashew or mac or combo)
soak them for a creamier dressing (1-2 hr is fine, then drain)
3/4 - 1 c filtered water for blending
3 T lemon juice
(translates into approx 1/2 lemon)
1/3 c cider vinegar
1/3 c evoo
3 T agave ( or 3 soaked dates)
2 cloves garlic
1 t garlic pwd
3 t onion pwd
1 t dill
1 T sea salt
1/2 t basil
and to add after it's done:
1/4 c finely minced parsley
another 1/2 t dill, minced

Directions
makes 3 cups
serving size 2 T
vitamix blend all ingredients till creamy and smooth except the last 2,
then once blended, stir in the last 2 ingredients.
thickens in fridge.
thin to desired consistency if using as a dressing- or toss into wet lettuce leaves as is.

Number of Servings: 24

Sorry if everyone else knows this but what is evoo? I've never heard of it and there is 1/3 cup in this recipe so I'd be interested to know. THANKS!!!

jacsam, evoo is short for saying extra virgin olive oil.

Raspberry4, about 10 minutes before you started this thread, my husband said how much he loves this dressing and that it is his favorite! :) I love it too! :) It's just the best isn't it?

mblessed - that is so ironic! I also put it on some cut up veges today (kind of like a 'potatoe' salad but without the potatoe) and lots of sea salt. Yum-yum! Enjoy !!! :)

I just have to get some cashews tomorrow. I wonder if it would taste ok with the cheaper sunflower seeds....like Zaphirah's suncheeze!!

I want to give it a try anyway, I'll probably hit the HFS tomorrow and get some much needed supplies!

Raspberry4, your version of cut up veggies, minus the potatoes sounds good! Another thing I did one time was mince some veggies. I think I minced a little onion, carrot, celery, parsley. I then added some of the ranch dressing. It sort of tasted like cole slaw, minus the cabbage. It was very good. The possibilities are endless aren't they? :)

walnutty, I'm not sure why both garlic and garlic powder are in the recipe. I added less garlic because one time I followed a raw recipe and the garlic was overpowering, so this time I didn't want to risk losing 1 1/2 cups of precious nuts. :) I did add the amount of garlic powder called for.

THANKS...I had to laugh when you explained what evoo meant....I didn't even think of it being initials for something. I'm still trying to learn some of the lingo around here, which makes things fun. Well, I have that ingredient on hand so now I can try it....THANKS again, Judith

You weren't kidding, Snowdrop, this IS addicting!

I wasn't sure at first if I liked it. I LOVE ranch, and was looking for a substitute. It didn't taste like ranch enough to me, though I thought it was good. I thought at first the vinegar or lemon juice was too heavy, but now I think that's because I'm used to dressings with sugar. The second time I had it, I liked it more. The third time, I was hooked!:p

Now, I end up having two salads in a row, just so I can have more. I may need to join a dressing addict's group or something.

It was a little thick at first, like veggie dip, so I thinned it a bit, maybe too much. But then I realized it was perfect: thin enough to drip it slowly all over the salad, and use a lot less dressing than I normally would, but not so thin that it dripped on my shirt or slid off the lettuce. Great!

I used a cashew/macadamia combo. I didn't have basil, so I look forward to adding that when I have some. I didn't have garlic powder either, so I added another garlic clove. I wasn't sure if the dill was supposed to be dried or fresh, so I used what I had, which was dried. If it's even better when I make it the "right" way, that will be amazing.

This is the first raw salad dressing I ever made, and it is wonderful!!! (Of course, ranch is always my favorite anyhow!) It was so good that I was eating it by the spoonful!!! The only thing I did different from the recipe is that I didn't add in the garlic - I felt the garlic powder was enough, and it turned out perfect. And it hardly took any time to make!!! I am keeping it in a one-quart glass canning jar in the refrigerator. I don't think it will last very long around here!!! Thanks for the recipe!!!

I've heard of barbeque sauce, but not ranch dressing. What is it? Is it the same as barbeque sauce?:confused:

It's a creamy dressing spiced with parsley, onion powder, garlic and parmesan cheese I believe. This raw version is very good - my SAD mother really liked it :) It's nothing like barbecue sauce.

This one passed the kid test! They are scarfing it down this very minute! An entire bunch of celery and 1lb of carrots will soon be history. I started making this and realized I didn't have the parsley, so I just used italian seasoning instead, so maybe mine is more like a creamy italian, but it is good none the less. I absolutely loathe apple cider vinegar, seriously even the thought of it makes me gag but I can tolerate it in this. I might try ommiting the vinegar next time and see what happens. I think for me personally, it would be awesome but I know how many of you out there love the acv.

The recipe calls for 1 T (tablespoon) of sea salt. Is this right? Or should it be 1 tsp (teaspoon)? Anyone able to help me with this? Thanks.

It does say 1T but since we haven't seen response, you can start with 1 teaspoon and if you need more than you can surely add more salt. I think 3 teaspoons = 1T. I'm sure you can adjust to your tastebuds, but starting with 1 teaspoon surely would be great even if you had to work your way up to the 1Tablespoon (which is 3 teaspoons). I appreciate the recipe, but right now eating nuts only a few at a time, but maybe later it can be fabulous to use on my brother in law who will love eating here when he visits from FL mid July. I can test his tastebuds at that point. I'm sure I would love it. For me, it's about this fabulous recipe: later down the road. I have no control so making it and keeping it around wouldn't trick my mind.

Thanks carolg. That is what I'll do - do it to "taste". I guess I knew that but I was surprised at the amount all the same. Everyone has raved about this recipe too - another reason for my surprise. Thanks for taking the time to answer me. I have been eating junk again this past week and am really noticing more and more that it makes me feel so awful. I've had a very stuffy nose and lots of post-nasal drip from cream, wheat and sugar and honey. So today I quit (again) coffee and tomorrow will begin the Raw foods again in earnest - thus the desire for snowdrop's recipe. I didn't find any information about you - like where you are from or how long you have been doing this - but then again I didn't really get into your past posts or threads. I will when I have some time. I will be reading your posts with interest though.

Was raw for several years, eat mostly raw now, maybe 100% most days, but dip down to maybe 98% or so without any guilt. Vegan for over 30 years however. I eat super simple to simply live. I used to dehydrate and been long time. I throw stuff together in minutes: salads, smoothies and frest fruits. I love this lifestyle. I don't sprout much, but have what I need if I want to do it in jars however. I live close to Boulder, CO and lead the raw group up there for years. Great group and my friend Brigittemars.com is part of it. She wrote Rawsome. Tonight rawluck and we have two per month. Always plents of food, people and great to the max. If ever planning a trip our way, like Denver, contact me. We have the room! If it's good enough for Paul Nison who has been here twice already, his home away from home while in the area, I'm sure you will be happy too.

Email me or post any questions. I will reply here for others benefit. I'm not your gourmet "cook" but I have learned how to make this lifestyle work for me. I'm Pam's cheerleader--one who posts she Needs Help and Support thread. She said she'll be here end of the month. By that time she probably will have lost several pounds and can get on her hands and knees planting some of tons of veggies.

I made this just now with a huge plate of veggies, it's the first thing I eat raw since I'm raw that actually looks raw, I bet this is what people think I eat when I say I eat raw, but in 3 years raw it's the first time I've made cut up veggies and dip.

I don't normally eat plates of raw veggies since I need tons of calories, but with this I get about zero calories from the huge plate of veggies, and 1000 from the dip, so the veggies give me the nutrition, and the dip gives me the calories. I hope I cut enough veggies to eat 1000 calories of dip with.

I've never really had much ranch flavored stuff so it's hard to tell if it tastes like ranch but it sure tastes good and what I'd expect ranch to be.

I too was surprised at the amount of salt and used about 3/4 T but would have put the whole T now that I taste it. I've ruined so many things due to putting too much salt that's why I put a bit less.

Thanks for the recipe and getting me to eat a huge plate of veggies. If only I had the time to do this daily.

That recipe is sooooooo good! I tried it yesterday on a lettuce and tomato salad, and on some dehydrated daikon radish "chips". Today I used it as a dip for thin slices of jicama and a few assorted veggies. That one is a keeper. It's going in the recipe binder! :)

Does this mean 1/2 to 1 cups or 1 AND 1/2 cups, so 1.5c?

Also is everyone using fresh or dried dill & basil. I've only ever used these fresh?

I used 1 cup of cashews AND 1/2 cup of macadamias, (minus a few for snacking). I used dried herbs. I also cut the sea salt by half, using 1 1/2 teaspoons instead of 1 Tablespoon.

Fresh herbs would be nice, double or triple the quantity for fresh herbs. BUT, would they hold up as well for several days in the fridge? I don't know.

I used mine up by the fourth day. Still tasted the same on the fourth day. It probably would have lasted another day or two.

I passed this along to a local community stranger. I got two raving reviews but giving Snow her credit due.

Now I'm hunting for parmesan cheese recipe. I had a great one but where did it go. I have the macs already ground up a pinch of salt in it and need to figure out the rest.

I'm not always here so feel free to post and then send to me via email...I would love it.

I have done it without the onion or garlic powder. I used 1.5 garlic instead of the 2 garlic cloves and powder and about 15 small chives (from the garden) instead of the onion powder. Also used chia seeds to replace the olive oil (soaked at ratio of 1 part chia to 5 parts water). Used date soak water for blending water.

Very tasty! I recommend doubling the recipe as you will want to have plenty!

HOW do you come up with these ideas?! That's such a great idea... There are times when I can't use it up quickly enough (I make a quart at a time) and this would be a perfect solution. *Ü*

Deb, that is how I came up with it! I made a full batch of dressing for a party and hardly anyone ate it (or the green salad for that matter). I also had an abundance of kale to use up, so there it was. :)
