Has anyone tried modified the ice cream recipes from raw food real world book?

I would like to make some ice cream but I do not have an ice cream maker (crank)

I have some mature coconut that I cracked open yesterday and I was thinking of freezing that and running it threw the champion with the blank. I have done this with frozen bananas and the texture is to die for!! Smooth creamy goodness. I almost want to put it in a pastry icing bag and squeeze it onto a raw waffle cone. Raw soft serve!! Any way... I am hoping for two ideas

1. A modified ice cream recipe vanilla using coconut. Comments on using fresh mature coconut verses the fresh young coconuts:)

2. A better way for getting mature coconut out of the shell rather than spending half an hour with a butter knife flicking out bits at a time!

Thank you ooh so much. If there were a way to get some through the computer so you all could try it when I am done I would gladly do so.:D
