I am wondering if raw corn, cauliflower, potato, rice, or asparagus can be eaten raw? Is there anyone to soak the rice and just eat it once it swells? Or do you have to steamed these certain vegetables to be eaten? Is there a certain kind of preparations for these foods raw?

Yes you can eat those raw. Rice is my least fav thing to eat raw because it tends to be rather chewy. Use cauliflower as a rice substitute.

I read potatoes are toxic raw (they're toxic cooked also, they aren't meant for humans to eat). Corn and rice are both grains, which also aren't meant for humans (grains are for birds, when eaten by humans they cause diabetes, cancer, crohn's disease and many other problems).
I eat raw corn every now and then but limit my intake due to how unhealthy it is. Also all non organic corn is genetically engeneered to create it's own pesticides, but organic corn is unhealthy also since it's a grain.

Some raw foodists still eat sprouted "live" grains and do very well with them. It depends on your constitution.
Do you have Alissa's book Living on Live Food Crissy Snow? It explains the raw food diet in-depth.

Raw WHITE potatoes are toxic, see below:
The potato plant is toxic. It contains an alkaloid named solanine that appears in all the external parts of the plant. It is also found in the tender buds of the tubers during the germination process. Excessive ingestion of raw potato can produce gastro-intestinal, liver, as well as heart damage. Because it is a vegetable that contains a fair amount of starch, it has emollient properties. It can therefore be used externally to soothe the skin and useful for burns. It also antacid properties to help combat any gastric discomfort. Because of the possible toxicity, it is best to avoid the use of raw potato.
Sweet potatoes, orange potatoes and yams are NOT toxic raw. They are, in fact, quite delicious.
Grains are not necessarily toxic. Properly soaked and sprouted, wheat, hulled (not pearled) barley, oat groats, quinoa, amarinth and other grains are healthy and nutritious raw foods. When cooked, their starch is changed to a form that is carcinogenic. Raw, fresh corn on the cob is perfectly natural and healthy.
I would avoid genetically modified food in general, not just corn. Most conventional fruits and veggies are GM. Buy organic whenever possible.
However, if you do eat genetically modified food (in the U.S. it is completely legal to sell unlabeled GM food), it's not the end of the world, as man has been genetically selecting food and thus changing it since prehistoric times. Modern GM practices just accelerate this ancient process.
Cauliflower is good to eat raw, just be careful not to eat a ton of it and other veggies of the brasica family if you have thyroid problems because they contain goitrogens.
Hope that clears up your concerns. BTW, sprouted black beans are NOT safe to eat raw. I didn't know that when I first went raw and ended up with a massive case of indigestion. Be sure to look up info on the safety of any new bean before you sprout it. Adzuki beans, lentils and chickpeas are safe. (chickpeas are harder to digest, though)

Butternut squash is wonderful made into spiral noodles. Try Alissa's golden curry sauce--one of my absolute favorites.

I love my butternut squash noodles even more than my zuchini noodles!! They are great with a curry sauce (or do like me and drizzle with evoo, and some spices like curry, cumin, sea salt, chili powder!)
Yummy

Thanks everyone. I am trying to stay raw as much as possible. Sometimes it is hard when you are diabetic.

What about eggplant - is there a way to eat it raw? I have peeled sliced salted and put in salad but it wasn't great experience.
I would be careful with wild mushrooms - white champinions, cremini, portobella shitake are ok especiallly whn marinated in salted water - oyster mushrooms and enoki have some toxins i heard and shouldn't be eaten raw.

There's a fantastic recipe floating around here somewhere for "Bacon-Why Not?" eggplant dehydrated; very very good. Like a jerky

How are raw white potatoes toxic when the recipe for potato chips in Alissa's book calls for them?

White potatoes have to be stored in the dark. The toxin develops under the skin, if the potato is exposed to sunlight. You can tell the toxic parts, they turn green. Make sure the potato is uniformly white. Personally, I prefer Yukon Gold potatoes or sweet potatoes.

you think so? i'm no longer diabetic and my hubby's diabetes is finally under control and his numbers are GREAT now that he's raw.
have you seen "simply raw - raw for 30 days (http://www.rawfor30days.com/)"?
garlic and onions..... and green peppers are three things which can cause upset tummies... bloating etc when eaten raw. i find that if i marinate garlic and onions... they don't upset my belly as much and green peppers should not be eaten raw or cooked as they unripened fruit!
