I had been looking for young coconuts with no luck for nearly 2 years now. I only found some once at my grocery store when they had them for just a few days 1-2 years ago and never sold them again (unless I missed them).

Well today I was going to the asian market for black sesame seeds and tamarind (I had already been to this asian market and they only had mature coconuts). As I was going, I saw another asian market just up the same street and decided to go see that one. I found the tamarind and black sesame seeds, and even hing/asafoetida (a spice I had been looking for for a long time), I was already really happy to have found those three items. Next I ask if they have young coconuts since I had not seen them yet, and the moment they said "yes" I couldn't beleive it!

They had both the "cone shaped" ones and others that still had the green husk. I got the cone shaped ones since I know those are young coconuts, but what exactly are the green ones? Are they the same without the formaldehyde dipping of the regular young ones?

Also, I noticed the young coconut's water tastes very different than mature coconut water or even the coconut water I buy in tetra packs (Vita Coco). Why is the taste so different? Is it normal?

This young coconut discovery opens the door to hundreds of awesome recipes I could not do until today! I was almost gtting ready to move to another country to get these! Luckily, I got them barely a 10 minute drive away!

Thanks

The green ones have the full husk on them. Behind that green is the white stuff of the cone cut ones. Young coconut water should be very mild and sweet. As they mature, they become more fatty, and the flesh absorbs the water as time goes by. Yes, they do taste differently:) Young ones will have jelly-like flesh at times, ranging from pinkish brown to white. If they are grey or have a bad odor, they are no good. I keep mine (when I can get them) in the fridge until I use them.

Enjoy!!!!

Well as I said I went back and this time tried the whole young coconuts with the entire husk (untrimmed). This one did not have the weird taste of the trimmed and dipped in formaldehyde ones. I can only guess the weird taste was the formaldehyde, it did taste very unnatural and "chemically".

So for those who think the weird taste of young coconuts is normal, make sure it's not the formaldehyde you're tasting by trying untrimmed natural coconuts.

I'm never buying a trimmed one again.

wow... that's kinda scary raweater....

that's one great thing about being here in Hawaii... coconuts are right off the tree...

I've often wondered when I read posts where peeps said that the young coconuts tasted weird... cuz to me the taste is amazing... wow.... very scary!

I didn't realize that those thai coconuts were dipped in formaldehyde... that's just wrong!! http://i149.photobucket.com/albums/s43/FireStar_830/crazy.gif

Yes, it is insane, but there was definately something abnormal about the taste of the trimmed thai coconut. I thought it was normal at first, but the untrimmed/undipped (I can only assume) one tasted completely natural, unlike the trimmed one which had something repulsive about the taste and smell.
