I've tried mashed cauliflower for both "sushi rice" and "mashed potatoes" but I just CANNOT digest it, no matter how many enzymes I take! LOL! So I came up with mashed parsnips instead. First off, I LOVE RAW PARSNIPS. They are a comfort food for me from years ago (SAD). The dc really LOVED this recipe and I had to fight one of them off with a spoon to keep him from devouring the whole batch. :eek: :D

So here's what I did. I think the recipe could use a tiny bit of tweaking if anyone wants the challenge. :cool:

3 parsnips-peeled, chopped and FP'd well.
Add:
1t of garlic
1c soaked cashews
1/2 a lemon-juiced
FP again, occasionally stopping to scrape sides

Add olive oil. Not sure how much-probably about 1/4 c. Blend. Add 1/4-1/2c water. Blend.

Salt to taste. You may want to add more3 olive oil, depending on your preference.

Oh, and I think this might be really good with an avo in addition to, or in replacement of the cashews.

I definitely love mashed parsnips!! I usually add nutritional yeast and make it cheezy. To me, they taste so much better than cauliflower. I am glad you found some great food.

Oh! I'm not the only one who has difficulty digesting cauliflower. I thought it was just my bad attitude......

Thats like the parsnip whip recipe floating around except that one uses pine nuts instead of cashews. I like it but I can't get used to sweet mash - I suppose cashews would be even sweeter?
