Ok, everyone is talking about how raw nuts are really not raw anymore. Bummer. My question is...if you buy nuts in there shells...are they raw if you take them out of the shells yourself....or are they heated already before they arrive at the grocery stores?

I am pretty sure that wallnuts are not raw even in the shell because I got raw wallnuts once and they were different. They were greener and wetter and went mouldy very fast.

Is this not true for seeds though? I bought raw pumpkin and sunflower seeds recently.

It is true that you can no longer buy raw almonds from a "handler" (any middle man such as a grocery store or company that uses almonds in their products); however, you are allowed to purchase raw almonds directly from a grower. I have found this WONDERFUL family run orchard in California that will ship several types of nuts all over the world. Currently they have free shipping with a bulk order of 10lbs of almonds. Their nuts are all raw, not pasteurized or run through chemicals or gases. They taste amazing and they grow several types of almonds too.

This year I was lucky enough to go walnut picking at my fiance's grandpa's ranch in Oakdale, California. Many of the walnuts on the ground had aready lost their soft outside brown sheath, and others were still encased in them. I simply pealed it off. They were the best walnuts I had ever eaten in my life. I still have a lot of them left.
Now when I see walnuts for sale at Safeway, they definately dont look natural or even taste good. They have spotlessly clean shells, unlike the walnuts I picked. And I think they almost always are stale once they get to the shelves.
I am buying my nuts from Trader Joes, and still some of them from Safeway, like brazil nuts in their shell. I havent found those at trader's yet, and I'm not rich enough to really shop at WF

At least I'm sure the sunflower seeds I get are raw, because they grow into beautiful green-leaved sprouts. My flax seeds also sprout.
I can't eat avocados and try to avoid non-raw nuts, so seeds and coconut are a good source of fat and protein for me.
Of course, I still indulge in "raw" (maybe not raw) nuts from time to time.
