...Hi everyone! .....my hubby and I want to make raw crackers and wondering why whole wheat flour {from a store/in a bag} that is just ground up isn't raw....my hubby notes that it is just dried and ground....I'm assuming it is processed......can someone shed some light on this? I also don't see any recipes for crackers using hard or soft wheat berries that are fresh ground/milled....I'm also wondering why this wouldn't be raw........just make the flour from dried wheat and grind it up and add water and seasoning and dehydrate????? Any insights would be appreciated! Thank You in advance! Deb

The best way to make crackers/breads from wheat is to sprout the berries just until they have tails about the same size as the berry. (Just a quick note: Ground sprouted wheatberries are extemely sweet and can be used as a sweetener too)From that point you can dehydrate and grind into a flour or use as is. I usually put it wet through my champion with a blank screen. Add fruits, nuts and make into a small loaf and dehydrate. If dehydrated try a coffee grinder or a high speed blender. Yum! You can also purchase Essene breads through some markets that Whole Foods or Co-Ops which is "almost" low temp. baked sprouted wheat.

Even when I bake bread I never use the whole wheat flour from the store. Commercially ground wheat is processed using grinders that heat as they grind. In addition, whole wheat flour goes rancid very quickly as the oils in the hulls are released and the nutition/vitimins diminish after 48 hours of grinding. If you taste the store whole wheat flour it will be bitter from the rancidity compared to fresh. I use a stone grinder at home to grind my wheat as I make bread.(for my SAD teenagers & hubby). Even a stone grinder produces too much heat to be considered raw.

There are a lot of recipes on the web for essene breads or if you need one let me know.
