View Full Version : Delish non-dehydrated carrot cake

Here's my recipe for non-dehydrated carrot cake. I love this because it's sweet enough to eat for desert, yet healthy and hearty enough to eat for breakfast. If you don't usually eat this much flax, be sure to drink a lot of water! First, make Ani Phyo's flax pancake batter:
That recipe is:
2c. whole fax seeds, or 3c. flax meal
2T. liquid cocnut oil
1/2c. agave or maple
1/2t. salt
1/4c. water

Then, mix in 3 grated carrots, 1/2 cup grated coconut, 1 tsp. grated ginger and 1/4 cup sunflower seeds. Dust your hands with maca (or anything else powdery) and knead. Divide in two balls, shape the first ball into one layer of the cake and coat with raw frosting. Then add the second layer of the cake and top with raw frosting.
Decorate with grated coconut, nuts and seeds, chopped dates or whatever suits your fancy.

...Is coconut oil the same as coconut butter? I've only ever seen the solid, white stuff in my local health food stores. thx :)

Coconut oil is coconut butter. To get it to melt, put the container of coconut oil (butter) in 80 degree F water for a little while. It will become liquidy.

I love dehydrator-free recipes although I do own one. Some days there just isn't enough time for all that. So nice of you to share with us! Thank you!

That sounds soooo good. I like dehydrated recipes also, but I love that you can make it and eat it right away. My dehydrator takes FOREVER!

And another plus to this recipe is that I have all the ingredients on hand except for stuff to make frosting. I'll probably make it anyway, just little carrot cake cookies...haha
