Flavoured honeys

A few times I've seen raw recipes that called for particular types of honey, and I had no access to them. But now someone in the UK has started selling raw honey from Spain, with different flavours yay. So I now have a jar each of heather, orangeblossom and rosemary.
I'm sure there was a raw recipe that required heather honey but I can't remember what it was. Does anyone know?

some honey is very delicate (apple blossom) and light
others strong (buckwheat) and dark
the color of it can indicate that for you.
the recipe may be overwhelmed by a too strong flavor
or might need a powerful flavor to compete with other flavors w/o getting lost in the mix.
