Sorry if this has been covered over and over again, but after reading sweetgoddess's journal, I would love to find out how to make this ' date nut torte ' that is mentioned in the diary. Thanks heaps, Franny :)

Although I have tried almost every yummy raw dessert recipe I can get my hands on, for some reason I had not made Alissa's Date Nut Torte until tonight.
And oh my, what I have been missing! It is more than wonderful, I served it with fresh raspberries and I could have eaten the entire recipe myself.
So I have a new favorite dessert, of course I have to add this to my long list of "other" favorite desserts too. Ahhhh... isn't it wonderful to be able to eat dessert for dinner (or breakfast or lunch) and not feel guilty about it!

Thank you for reminding me about the Black Forest Cake Revvell, I haven't made this in a while and wow it is one of my top favorites for sure!
Hmmm... may have to pick up some cherries this weekend and make it as soon as the torte is gone!
I made it yesterday for the first time!!!!OH MY GOD!!!!! it is fantastic. I'm not big on sweets, not even before raw. I just had it for breakfast this morning. and it is wonderful because you don't feel guilty at all. I even gave it to my kids ( to their surprise) for breakfast.

And, am wondering if anyone had any tricks of the trade to tell me about? Reason I ask is because I tried the Fudge balls, and I can't get them to ball. They are more like blops. Not even blobs, but blops.
I don't want to lose money on my recipes b/c I am on a bit of a budget at the moment.
I have soooo many recipe questions that I need answered ASAP. I wish that there was a hotline!!
I soaked the walnuts for probably about 2 1/2 hrs. Where do you store them after you have finished soaking them?
Does the amt called for in the recipe mean pre soak or after... And, does it make much of a difference?
HOw long are the walnuts, or any nuts for that matter, good after you soak them. I am trying to glean this info from the book, yet it doesn't seem to be making too much sense to me.
I need HELP!!!

Lauri, I don't soak the walnuts when I make the torte. I think it would be way too goopy if i did.

If you have a dehydrator, dry the dates and nuts before you make the torte OR...dry the nuts for another time or just to snack on and if you have some unsoaked nuts left, use those instead. That way, no waste!
Yeah, some recipes will result in a mushier consistency if nuts are soaked first. I really don't think it'll matter if the dates are soaked, just drain them well before you use them...but the nuts will almost always give you a softer, mushier texture than you want for the torte or for the fudge balls.

The only "nuts" in the fudge balls is almond butter. Perhaps it was the brand? Goopola.
Maybe the walnuts could dry themselves out? I don't have a dehydrator. I love life. I love food preparation, I love life, I love food preparation, I love life, I love food preparation.
Arghhh!!!! Would that someone could move in w/me for a month, and walk me through this kitchen madness!!! I am in no ways melodramatic. This has been such a challenge these past couple of days!!!
I know it seems so simple, but when you are biting the bullet and not eating anything cooked irregardless of your failed recipe plans, and you are new at grocery shopping (what an embarassing admission), this whole thing feels like craziness!!!

I know that some may say that you MUST soak nuts always no matter what...but as a general rule, if the recipe doesn't say to soak, I don't soak. Just something to remember for next time. I mean think of it this way...we're told to soak nuts to release enzyme inhibitors, etc. Well...if we're mixing dates and nuts or raisins and nuts in the first place, that's already a "rule" broken about food combining...so if we're gonna do THAT...might as well not make much of a fuss over the nuts being soaked or not. But that's just ME and MY personal take on it.
Yes, you can set the walnuts out to dry maybe on a towel or on paper towel. The soaking of the dates may have made your fudge balls turn out as they did.
Your torte will still TASTE yummy, so try not to be too bummed out by it. We have ALL had our raw recipe (and I'm sure even cooked recipe) disasters...don't let it get cha down. I know it's not fun feeling like you've wasted money or food. But it's all part of the new learning process of making new foods. But don't give up...you'll be whipping up stuff in no time!

Oh, I wish I could say I knew what i was doing after 6 months of raw foods prep. Alas, I had taken a whole afternoon to make *new* stuff today and I only scored 1 out of 4.
Sweetlip's Cheese Nips: Very Good. Making some raw ranch to dip 'em
alissa's burgers: well, they look good. If your upper lip curls when you put food in your mouth it's a bad thing, right? Seriously, too heavy and I now know I don't like rosemary. My bad.
Banana bread w/ rolled oats and kamut: blech. Lately all dehydrated recipes with grains taste bitter to me. I can only eat my beloved oats in oatmeal or meusli. Or raw cookie dough.
Sunflower seed flax crackers: Someone stop me. Please. Wrench my hands from the food processor before I do her bodily harm.
And yet, I'm going to try alissa's pizza wraps before bed. Because the only raw bread I've made that I like is the onion bread with caraway and poppy seeds and I can't use it to wrap my many mexican inspired veggie dishes. I am on a quest.
Raw goodness will prevail!

In a large pan -- outside in the sun. Drys quickly, only thing I do is toss them several times. Oh, and cover with some kind of screen to keep birds out.
I've dried them in the oven, very low temp, not good. Use the sunshine!

When I make somehting that comes out too 'runny' so to speak I put it in the freezer and and it usually goes harder but does not actually freeze - I then eat it straight from the freezer. I agree too with not soaking the nuts - will not hold together as wel if you do this.

I did a variation of the nut torte recipe last night with raisins and cashews instead of walnut and chilled it in the fridge for about an hour...I WAS LEVITATING! I lie not, I actually licked the plate (just don't tell my little people. hee, hee). I did not make the frosting, but if I had some fruit puree (preferably some type of berries) I think it would have done me in.
