How long do you soak the dates?

Anytime a recipe asks for dates to be soaked you need to look at your date. Are they the big majool softies or firmer sugar dates. If they are soft than perhaps an hour; dry firm ones several hours. If you are in a hurry soak your dates in a ziplock bag with warm water to speed up the process. The zip lock ensures total coverage with the least amount of water.
For the torte "frosting" you want them very very soft & broken down. Some recipes you can get away with just "a bit" soaked however it all depends on what you are making.
I tend to prepare all the soaking for my recipes the night before. I just put the dates nuts seeds etc in little jars with water and put them in the fridge; presto the next morning they are ready :).

Thanks! I already have them soaking, so I guess I will leave them overnight. I realized that I do not have a full 2 cups of raisins to do the recipe, so I will do it tomorrow and the dates should be very squishy! The are the medjool dates.... my new favorite food and pleasure.
