I'm heading out to a pot luck tonight (not raw). My hubby was bragging on my preparation of raw food (I'm veeerrry new at this) and everyone is looking forward to what I'll be bringing.

The thing is, I don't have a saladacco to make things pretty, I don't have a vitamix or a decent food processor. Okay, fine, I still have made do at home. Doesn't always have the consistancy that I think it should have, or look great, but the flavors still come out pretty good.

My question is regarding rolling up green leaves ... i.e. romaine lettuce (I'm out of collards), or cabbage (I have both green & red). I made Alissa's Sunny Pate and plan on using that as a filler along with sliced tomatoes and avacado. I just haven't been able to make them come out pretty, or NOT SLOPPY when eating.

I need some suggestions as to actually how to assemble these. Do I use toothpicks? Just a little bit of 'stuffing'? Can't believe I'm nervous about this to present to others, but I am.

You will do great! No worries. I usually use spiralized beets and it looks very pretty, but seeing as you don't have the spiral slicer, I would just use toothpicks.
My favourite greens to use as wraps are collard. I just cut the stem off and roll it like you're making any kind of a wrap :D
Good luck!
Let us know how it goes!
