Coconuts

I have cracked open three young coconuts, one tasted great, the other two I am a little leary of. They all tasted different. How do I determine if I have a rotten coconut? What color should the flesh be?

Some coconuts are pink or purplish in color. From what I've read those are very young coconuts and their flesh is jelly like, and they are good to use. I drink/eat these all the time and never had any trouble. Young coconuts in general don't have as a strong of coconut taste, they do taste a little different - but they still taste good!

If the flesh is grayish, that's a spoiled coconut. Since I've started eating coconuts (I've probably gone through 60-70) I only had one that was bad. And I think that was because I left it without refrigeration for too long...

The coconut farmer that I get my coconuts from said that if he found one that was purple he personally wouldn't eat it.... but -- I have read LOTS AND LOTS of posts here on RFT - that lots of rawbies have eatten purple ones.

I love them when the meat is very soupy... it's delicious!!

Starfire, you're so lucky to be able to get your coconuts from the local grower! I've heard from our local health food store that the purple color can mean that the formaldehyde that thai coconuts may be soaked in for fumigation may have penetrated the flesh, whenever I've gotten a purple one it usually does smell funny and also have some mold growing on the bottom.

I just went into this Asian market for the first time and was so excited to see Thai coconuts for $1.98 but when I picked them up they all had mold on the bottom so I didn't get any.
I am thinking though....are they all dipped in formaldehyde? Yuck !

Thank You, for everyones response! Upon further inspection, I found the bottom of one slightly cracked, this one tasted like soap, and the other just isnt right. This freaks me out. That is the last thing I want to do is ingest formaldehyde. I am returning them for an exchange.
