I always bring a salad to gatherings, and there is usually a fruit salad, but I want to bring another dish so I have variety. My problem is a lot of dishes are expensive to make for more than one or two people. Any ideas for some cheap party dishes that are not salad or fruit?

Ah-ha! I just saw someone else has a thread for simple holiday recipes :p Most simple recipes are cheaper than complicated ones, but still, any cheap ideas would be appreciated.

Pesto-stuffed mushrooms would be pretty cheap, and a good snack-y type thing :)

Make a raw chocolate pudding and pour it over an almond, date crust and put it in the fridge. Set it and then slice it up and serve it. It's HEAVEN and probably costs about $6.00 to make. You can make a square one and slice it like snack squares. Mmm

Hi

You could make date nut balls. I usually bring these along to a potluck. They are easy to make and travel well!

Trinity: which chocolate pudding recipe do you use? My fear is that these pie recipes will be runny when I slice them.

It's not even close to being runny lol.. Here are two of my FAV recipes! :D

Chocolate squares

In a blender mix 1 avocado and 1/4 C raw cocao powder
Add something sweet of your choice such as 1-2 dates.
Pour into a square pan with almond date crust and chill in the
fridge for 1-2 hours.

Blueberry Squares

In a blender puree 2 cups of fresh blueberries.
pour into a square pan that has an almond date crust.
Put into the fridge for an hour or two. Cut and serve.

These recipes are firm. Not soggy and so simple.

Two things I like to bring to parties are: Tiny sandwiches made of onion bread, Swiss nut cheese, lettuce and tomato. Or nacho nut cheese packed into hollowed out baby vegetables (probably not available this time of year) or chunks of celery and peppers.

I have been eating alot of nori wraps or sliced rolls, to make good use of my pulp, and cuz it's so quick and easy. Fresh juicer pulp is best, mashed with avocado and just about anything else, minced or diced, to create different flavors. It makes a nice spread, dip for celery, or filling for nori rolls or wraps. I think it is less expensive than a bunch of fruit, and versatility is great.
