If i blended some veggies (thinking cabbage, cucumber, maybe zucchini) into a paste, then dehydrated, could I make a sort of cracker?

You can but you might want to add some flax to hold it together.

You might want to stay away from cucumber for this particular recipe, as it will dehydrate into nothing, being 90%+ water... Just a thought :)

I'm thinking if she ground up some flax it would mix well with the cuke juice and hold it together, no?

Flax works great to make it stick together. If you're trying to avoid nuts & seeds in your cracker you can also use psyillium powder or avocado to make it stick together.

I did this! I LITERALLY pureed a bunch of greens and veggies, added some salt (and at the time I liked psylium, so I added that to make it gelatinous) and poured and dehydrated. I liked it :)
