Woohoo!! That's all I can say! I am so proud!

Measurements are estimated, I eyeballed, I will update when i make more, I had two batches last night (:eek:) so I don't know when that will be, haha

Caramel, by: Yana

1/2 cup medjool dates, soaked
1/2 cup brazil nuts
reserved date soak water
dash salt

Depending upon your kitchen tools you may want to powder the nuts first otherwise: blend (or in magic bullet) the dates, nuts, salt and a few spalshed of reserved soak water, adding more when necessary.

Use on anything! I even threw a tablespoon or so into the freezer and voila! this morning it was caramel icecream!! Take that Haagen Daz ;)

edit: You may also choose to add some vanilla, I am waiting for my hfs to get me some organic alcohol free extract, I expect it will give it that extra kick

Hey - I'm betting that if you "play" with this basic recipe (making it thicker) and put them into chocolate coated molds and cover the top and refrigerate or even freeze you'd have a chocolate covered candy! Hey hey!!! Always thinking I yam!!!

I just put some dates in water for soaking & have the brazil nuts measured out - ready to go for when I get home.

I was wondering how I was going to eat all of those apples I bought........:rolleyes:

hehe! I am nervous and excited!! Haha, i'm here in anticipation of your opinion. Please don't pay much attention to the measurements, it was roughly equal parts but feel free to add or take away as you see fit. I am on the edge of my seat here!!! :eek:

I just made this....I doubled the amount of nuts and dates, added some agave, vanilla and a fair amount of salt...pretty yummy!:) Thanks for the recipe Yana.
I added a healthy scoop of it to my shake this morning..almond mylk, maca & frozen banana.....very good!!
Not sure exactly what I'm gonna do with it yet but am sure I'll think of something!!!:D

First off, Thank you!! Hmm, I have a huge sweet tooth, and agave wasn't necessary at all, maybe it should read more dates than nuts? How long did you soak the dates for? I soaked mine for hardly anytime, possible the sweetness was dimished by a longer soak time? Because i am almost certain they were almost equal proportions, or maybe they weren't? haha. It's all irrelevant- as long as you like what you made :)

The cool thing about raw and recipes is that you can suit them to your individual tastes and preferences. The agave made it a little smoother for me. I made it in the vitamix.
This really was good. I still love RP's caramel recipe done in the freezer...makes awesome candy that has the mouth feel of "real" caramels"...can be cut in squares and wrapped.
Thanks for sharing this Yana...always fun to try something new...I have a sweet tooth too...:D

PS...I soaked the dates overnight. Maybe I added too much soak water to make it move thru the blades?? In any case it is delish!

Another "cool" think about raw foods is you can't go wrong. If it doesn't turn out quite how you wanted it to, pop more ingredients in and create something else.
You don't know how many times I have taken recipes that were meant to be one thing and made crackers! LOL!
Speaking of which - (sorry - hijacking thread here), but I have taken the RAWvolution Famous Onion Bread recipe by Matt Amsden and modified it and make onion/broccoli bread. Yum-Oh. It's in the dehydrator now!
I'll be trying this caramel recipe. Although my sweet tooth is not as strong as it used to be, which is unusual. Because my whole life I've had a sweet tooth.

GlimR- I am thrilled you enjoyed it! I soaked the dates for 5 minutes tops in warm water, haha, I used a magic bullet so I got away with adding very little water as everything is right up against the blades, I think that what did the trick, it did take a bit of time to cream up as the dates weren't really softened, just barely. It was almost too sweet for me :eek:, also plenty of salt in mine. Another tiny piece of date would have pushed it over the edge.

I love raw, you really can't go wrong! I haven't followed any recipes strictly and everything comes out great! It's beautiful, I am in love <3

For instance, I shall hijack my own thread ;), from all the marinated shroom recipes I created something completely different, it's amazing, they grow from eachother and transform. I threw together some chickpea miso- i'm guessing 1.5 tbs maybe 2? (I don't use shoyu), salt, pepper, tbs each of flax and olive oil, dried dill, and the rest water in a magic bullet, poured it in a zip lock with the onions, mushrooms, and fresh dill and into the fridge it went. Last night i put some over thinly sliced napa cabbage and warmed in the D- Fantastic! Just goes to prove that nothing tops raw :D

ME TOO!!!! Only I don't have any brazil nuts (so I used soaked sunny seeds) and my dates are deglets...but I am DESPERATE!!!!!!! So I went for it! I added some maple and also some vanilla extract, and OMG!!! if this is this good, I can only image how incredible it would be made with the medjools and a creamier nut such as brazils or macs! GREAT recipe!!
